I had heard that the food of Jerusalem was extraordinary but this episode showed a far more diverse food scene than I expected. Food is a blessing that crosses all borders and barriers.
Israeli food in general is extremely diverse and very fresh, fruits and veg especially literally only hours from the fields and orchards, and home-made. Processed foods are available, but nearly everyone cooks "from scratch" most of the time. Alas, in recent years a number of American chains like KFC and McDonalds have come here -- and generally don't do well. Starbucks, Wendy's, Carvel, all folded as we found them overpriced and not very good. Jewish immigrants from all over the world bring their ethnic foods with them, and some have become completely identified with Israel's own "cuisine".

I have enjoyed this tour of Jerusalem more than any other TV and tour show that I have ever watched. Thank you for this wonderful look at this epic and most historic city. God be with you and the people who co-hosted and shared their gifts of food and family tradition with us. If we could all see and love food together than we could get past the things that cause hatred and violence.
I just can't understand why you only have so little views and subs, compared to other 'food shows', your production quality is very high and your energy is infectious!

Loved this on one Jerusalem and loved all the food.Middle Eastern food is my favorite!!!!I am in LA and we have a good selection but not like there. I have traveled extensively and have always loved all the outdoor markets and hole in wall places where you see a lot of locals eating! I could smell from memory all the spices and flavors you featured.I also really liked you interacting with various cooks and chefs in their own homes.Good One.
One of my favorite LA restaurants with similar cuisine was the Moon of Tunis. Was in this hole in the wall, great bread, Bastilla better than my own, and perfect honey cakes with the mint tea. I still dream of it 35 years later.
My ginger cat was a street cat I adopted from Qatar. He loves boiled eggs, corns and Zatar bread, especially the ones with a bit of virgin olive oil sprinkles on it. You can't get any middle-easterner than that.

There were so many yummy foods on offer there, I am really interested in how this Kubaneh is made. Most of the recipes I found were pale or just lightly browned. I love the dark crisp crusts on the ones here. It looks and sounds devine!! I guess I will try a sourdough mix and slather the butter on and see how it goes...

Having spent two months in Ethiopia I can assure Paul that injera has all the taste and flavour of a wet dish rag, albeit a gluten-free dish rag. The 'condiments' it is served with are good, especially the vegetarian stuff.
I couldn't agree more. I've tried Ethiopian food for the first time this year in a very good Ethiopian restaurant. I was amazing. I only taster the vegetarian dishes because I don't eat meat and it was SO tasty.
You don't mix salt and yeast directly, you need to mix the yeast with warm water first or it hinders its functionality. So if anyone reads this, PLEASE mix it separately. That's why his dough didn't really rise, even after sitting for hours.
The cultures don't "clash" in Jerusalem. It's not the United States. Converge would have been a better choice of words. The people of all 3 religions have gotten along for centuries there. He names "...Jews, Arabs, Christians..." but Arabs is not a religion; Muslim is what a follower of Islam is called.
Nothing. It never existed. Largely because the Arabs have lost every war they've fought against Israel. Maybe if you could win a war once in awhile that might help.🙄

I'm in Machaneh Yehuda, the open air market, almost every day. It's changing, from a "farmers' market" into a "boutique coffee shop" sort of place, and I'm a bit sad to see it become gentrified. Still, there's nowhere better in town for the quality of fruit, vegetables, and just about everything else one can desire.
It's a mix. Still a lot of open air fruit, veg, butchers, bakers, etc. But it is changing. Parking is more of a problem in daytime, and the supermarket chains are improving the quality of their fresh produce. I agree it will be a sad day if Machaneh Yehuda fades away, though.
I have really enjoyed this series! During this year of COVID and lockdown not being able to travel is horrible. Thank you for letting me travel vicariously through you, Paul! I would love to go to all the places you visited and eat my way through each one.
I love the way that first dish was shaped by just pulling the dough and folding the ends together, what a great way to make small pies, with any kind of filling, and then cut in half to make eating so easy. Oh, Yum!
As someone that used to cook for a living I can relate to that feeling of wonder when someone cooks something incredible & full of love. It can make you cry, If you know you know.

My favorite city as well. Lived there for a year, then went back to visit in 2018 for a food and wine tour As soon as Covid is under control, I'll be booking my flight to go back. I enjoyed the video SO, SO much!!
This city just gets better and better. Vaccination is going well, hopefully by summer we'll be somewhat back to normal and welcoming our wonderful friends from around the world! We miss you all.

shopping and eating in Machane Yehuda is amazing! the sounds, the smells, the people, the noise..., the TASTES! There's a fruit shake shop that is wicked awesome. All kinds of fruit and herb combinations blended :)
My first taste of injera was at an Ethiopian wedding reception. I loved it with the delicious chicken dish they served.The breads and pastries in this video are making my my mouth water for them!
That market is amazing. I'm vegan and most of this lends itself to vegan versions without changing the character of the food. The shamburak looks like a great addition. Zatar!
yes zartar is very traditional since centuries in arabic middle eastern kitchens, it is now over the last few decades becoming more popular in other kitchens.
I have always wanted to visit Jerusalem; I knew the food was amazing, as are the people, but this literally made me cry with delight! It's so much more than I expected!

You're right! I live in Jerusalem and you can't find that stuff anywhere. We would use date syrup instead, which has a similar gooiness but it's dates!
I started writing this comment as soon as I saw ENJERA and can not believe ENJERA featuring on City Bakes. I know Poul why you didn't like it. you are not supposed to eat ENJERA by itself. It is used as a tool to hold all the delicious condiments like Doro Wot( Red chicken stew), Tibs ( lamb roasted tenderloins), kitfo ( Ethiopian Beef tar tar) Siga wot ( Beef Stew), Shiro wot ( Chickpea stew)...... try it with that and believe me you gonna enjoy it or maybe not, what do I know I'm bias hear🤣
Lol, it was painful to see him eat it straight and not at least try it with some shiro wot or something else. He definitely missed out on a delicious lunch.

I very much enjoyed this show - living in Jerusalem, I'm familiar with most of the places that Paul ate and really loved seeing how much fun he had trying the different offerings!
All I saw was Syrian and Kurdish pastries, bread from Ethiopia, Turkish pastries and bakhlava, Dates and flat bread and sandwich from Iraq, Arab Palestinian land, kanafeh and Sesame cakes, Falafel and bread from Yemen, clothing styles from the west (europe and america).. As Ghassan Kanafani once said "Everything in this world can be robbed and stolen."
This would have been far more comprehensive if you had one Jewish guide and one Palestinian guide. There were a few occasions where food origins were either skipped over or misattributed.

As a person who was born in Jerusalem and lived his whole life in Jerusalem, I can say that this is an excellent view of the city. It answers beautifully why Jerusalem is so special. To see Paul (who is an authority for me in the field of baking) enjoys and appreciates the food in Jerusalem made me so happy. Thank you Paul.
I ate so much sabidzch when I was in Iraq! And if I wasn't eating that I was eating falafel on samoon bread. When I was in Jerusalem I ate my way across the city and went home 10 pounds heavier after just 10 days! Oink oink me. 🐖 That Jerusalem "bagel" tastes and looks like Turkish "semit" sold all over Istanbul. Yum.

I went to Jerusalem in 2016 on a trip of a lifetime to tour The Holy Land. I enjoyed this episode especially for the memories it evoked and I hope I can go back on a more foodie-oriented trip (the food was really good, but kosher dinners were served everywhere we stayed, and as a vegetarian, most of what I ate there was hummus and falafel...no dairy at supper. I loved that Paul took his Grandmother there. I love his passion for culture in cuisine. I love his joy at a "good bake." But I love his honesty too as I never have enjoyed that Ethiopian flat bread, although I eat it with an Ethiopian meal. I am truly enjoying and inspired by City Bakes, and this Jerusalem episode is a gem.
