Jesus, this has made my mouth water! My first real experience of Texas BBQ a few years ago was Franklin's in Austin, an unforgettable experience of flavour and vibes!!
Watching Harry and Joe reminds me of being a liaison officer for British officers touring US bases in the late 90s. 9 states and we are every regional food there was to be had Cajun and Texas BBQ was the favorites

I thought that this episode would drop on a Sunday but I'm here for Harry and Joe to explore Texas barbecue on a Friday evening! Now I'm really anticipating part 2!
The only issue for me with them eating on-site is that I feel they rarely want to say anything negative, and I don't think I have ever heard one of them say, "I don't like this food".
I don't comment often, but being local to DFW some mortal sins have occurred that I should point out. 1. You're 'Finding the Best BBQ in DFW, not Dallas in this episode. 2. Joe, Plano is pronounced Play-No. 🙃
Goldee's is amazing and the line is actually a good time. The pork belly was my favorite thing they had. They will likely be dethroned by Barb's on the next list.
Aside from Barbs, nothing in Lockhart is anywhere close to the best bbq in TX. Kreuz bbq is good but it's not great. No reason to Lockhart to be called the bbq capital of TX any more other than tradition.
