"unity" bounce is because the track isn't stitched together into a complete mesh, so you're hitting the edge of the pieces where visually they're connected but they're really not. - source my best friend makes racing games.
I think that is more intentional than anything. All of those corner turns have the same build, except for the last one, before the finish? That must be an intentional risky because it saves maybe a couple of seconds but it also isn't a jump you can make every time... risky by definition.
