You guys are definitely my favourite china travel vlogger for your authenticity. Since you two started vlogging fine-dining I would recommend trying more of the upscale stuff in China. The price for fancy restaurants and hotels in China is far more affordable and gives much more bang for less money. You can refer to the Black Peal List for dining ideas which is a local version of Michelin guide.

Luke's tea-drinking part was so funny. 😂 You don't have to care too much about your dress in high-end restaurants. Just be casual. In many Chinese restaurants, they make tea for you as soon as you sit down and offer fruits after the meal. If you think the fruits are delicious, the waiters will offer more. Making tea immediately after you sit down is a tradition in China to show welcome to guests.

Next time, you can directly ask the waiter to take your order. China people are very honest and generally recommend the dishes he thinks are the best.

I'm glad you came to visit Suzhou! I'm a local here. The dish you're having is one of the most famous in Suzhou, a must-try when you visit! Since it's autumn now, I also recommend you try the Yangcheng Lake hairy crabs, which are in season and delicious. As for tourist attractions, you've already been to Tiger Hill, so I suggest visiting the Suzhou gardens, like the Humble Administrator’s Garden or Lingering Garden. Both have over 400 years of history and are among the most famous classical gardens in China. The Humble Administrator’s Garden isn't far from where you're having your meal. I hope you have a wonderful time here in Suzhou!

Your conversation in that restaurant was so funny loll glad I'm not the only one feeling weird in a fancy place. TBH I really miss China because we don’t really have dress codes in fancy restaurants, while in NYC, where I'm currently staying, there are. I mean when I go to fancy places I just wanna enjoy my food and eat like a pig, can't do that in a tiny fine dress.

In fancy Chinese restaurants they will serve shrimp dish before deep fried fish dish because tea shrimp got a milder and fragrant smell which will brighten you up and then wake up your taste bud first . Next will be the crab dish with a bit stronger taste then lastly the deep fried sweet and sour fish. The vinegar taste in the fish dish will distort the smell of the tea. Next time if you order tea shrimp and deep fried fish can eat in this sequence in order to get the best taste of the tea shrimp dish. Using sweet and sour sauce for the fish in cities not near to the sea because the river fish might have soil taste, the strong vinegar taste will get rid of the soil taste.

To many Chinese, soil taste of fresh water fish is desired over salt water fish.

How can you not like tofu? Real craft tofu does have a subtle, noticeable taste but most tofu one encounters is basically a flavor delivery system for all the surrounding stuff. Bonus points, tofu is low in calories and high in protein.

The fish is a demonstration of knife capability, as it’s completely deboned whole and fried. It originates from Suzhou. As others have mentioned, it’s called “squirrel fish” because it looks like a squirrel’s tail. Sweet and sour sauce is usually sugar (honey or rock sugar, occasionally pineapple juice), rice vinegar, soy sauce, cornstarch slurry to thicken and a drop of food coloring. If it’s not translucent, it’s ketchup based. In the west we use a premade sweet chili sauce as a base.

Song He Lou is not a fine-dining place. It is just a little bit on the pricey end for a lot of people. But it is truly one of the oldest historic restaurants. If you wanna experience fine-dining, you can find them mostly in new district around Jinji lake. BTW, Song He Lou is the birth place of the sweet & sour fried mandarin fish (Song Shu Gui Yu 松鼠鳜鱼).

Good quality Chinese Tea last for about 6 or 7 refills. Each refill has a different taste and is appreciated for its different character. The first pour is very often not consumed but is used to warm and rinse the pot and cup, and is considered to be too strong on the nose and too weak on the body. The third refill generally is the best. The tea you ordered, bilouchun 碧螺春 is a very delicate and noble (雅致) expensive tea with very small leave.

The restaurant should sponsor their expenses as the price is exorbitant to most people just for a meal. Let's check it out, braise To Fu 88 yuan, sautee river shrimp with tea 168 yuan and sweet and sour fish (AKA squirrel fish) 258 yuan, excluding the plate of fruit platter, tea and the spring roll and 10 to 15% service charge which is usually not existed. It is already 514 yuans, equivalent to around 66 USD for this meal or UK 55.2 pounds. The monthly salary range of the grass roots in China is between 2000 to 4500 yuans. The 5 star-rate is an index to show how much people have to spend rather than the quality of the food provided. It is not necessary to expurgate the fact or the cost deliberately. When the price is high, the more is the expectation. Some signature stuff are not living up to standard but just over exaggerated.
@NoohCee

Disagree, in absolute price, this is extremely cheap when compared to UK, US,HK and Singapore. When considering average income level and better than average restaurant, this is still at least 40% cheaper than the above locations.

If you like to eat crabs, you can try the very famous Chinese hairy crabs (大闸蟹). Hairy crabs are known for their tender meat and rich crab roe, and they are especially delicious in the autumn. Many people consider them the king of crabs. If you prefer sea crabs, you can choose to eat steamed big flower crabs (花蟹). The red and blue flower crabs are not only beautiful but also tasty, and I like them very much!
