Once the water gets up to temp there is not a void above it. Temps may be lower above it, but there's not a void. Not too mention, and I don't care what anyone else says cause I've tried it both ways numerous times, the steam from the water helps keep your meats more moist.

I must disagree as your statement actually counters your point, when you say temps will be lower above it that is what I consider as the void perhaps it is just the phrases we each use. The temp difference will have a significant difference between the top and bottom grates. Also why waste the fuel and energy to heat water? The moisture discussion does not cause moisture in meat, it helps to dampen the temperature in the smoker by keeping the temperatures down. As a test place a dry sponge in your cooker to determine if or how much it adds moisture.
@@OinkCluckMooBBQ I have temperature probes on the bottom grate above my water pan and on the top grate and they are the same. Where is this oasis of coolness you refer to?

I usually run water pan empty and foil over the top of it. With this daddy in place, will my fuel consumption be lower? Will the same coals burn hotter?
I did the same for a while before I used the FireDial. The issues I had was the heat would be pushed to the outside (around the bowl) and would not be evenly distributed in the smoker. The FireDial allows for pass through heat.
