As a foreign national owning a business here in the PH, you need to be hands-on. You need to make sure you're protected.

Been in the food and bar business for a long time… you’re making great progress. Smart idea with raising the floor in the kitchen. One suggestion- the new fridge: you can usually switch the hinges to the left side so the doors open towards the bar area- not the CR. Just a suggestion from an old pro. After running my own business for 20 yrs now mate, the best advice I can give you is this....There is no better person at running your business than yourself. I'd be running it for maybe 4 months before worrying about travel vlogs mate 👍👍

I suggest you mark the uneven areas on the floor in the kitchen with yellow stripe or put a railing because someone could trip and fall. Also saw uneven flooring near the seating area closest to the beach entrance that would be best to mark or put railing. Have it meet US or standards for safety and disability access.

I got a good one for you. Boonie Quek quek. Hard boiled egg wrapped with cheddar and bacon with a skewer then wrapped with mashed potatoes and rice and deep fried. You could do beef and broccoli wrapped with potato and rice. A spicy chicken one. Just an appetizer thought for you. Different dipping sauces.

you have to instill discipline early on with your staff. set your policies and implement them strictly. So youll set high standards within and outside the business.

Hope you keep in mind to NEVER Fully trust anyone with LARGE amount of $$ since your business is probably mainly CASH business, and remember that what you might consider small could be LARGE amount that most people there have never touched in their life, so don't tempt them, better safe than sorry, I know there are times you'll need to sort of trust someone but be very very cautious

Mike here is an idea… have one person on the cashier, every waitress will bring the order to her, each beer will be written down or typed in a spread sheet, and so will the food… then before she leaves she has to do inventory on the beer, and she has to match money in the drawer with items sold. If someone is relieving her you start a new drawer. This may sound complicated but it really wouldn’t be, especially if you had a spreadsheet that done most of your calculations. You could input the inventory into the spreadsheet even… then do a weekly inventory on your stock and compare to the spreadsheet. Make sure all employees know about the inventory checks and you are doing it to protect everyone and also for tax purposes, so nobody takes it personal. Good luck!

You got really lucky with that contractor,,rare to find one like this,,just double check everything and consult with him always..

I seem to recall (many years ago now) seeing some of the best Expat bars in Ermita, used to load up a barrel or large Esky with beer and ICE and not rely just on fridges. Firstly it gets the beer super chilled, also the fridges get opened a lot and need time to get the beer chilled. Also great for large events to increase cold beer capacity. They would also only restock the fridges from the ESKY beers that were already cold.

Michael, I wonder if you might stain or paint the bamboo walls - particularly the one that divides you from the empty lot. its grey and tired looking. it would look great with a wood stain on it maybe..

you will need additional stalls for your customers... maybe porta potty mostly hidden among some large potted trees behind a fence near the stage area.

Are you planning on daily ice deliveries, because 1 thing we would never risk running out of in bars I have been involved in was ice. Just a suggestion. During the day(especially summers) and weekends you are going to want to have a cheaper kids menu which is not chef related. That would be hot dogs, fries, chicken nuggets and other family friendly foods which could be a draw from beachgoers. My Dad ran lounges on Miami Beach for 15 years and on the Florida East coast during his other years. Many were associated with hotels like your resort across the street. A few of the ones my Dad ran were as well would say "Italian." Kids were a main consideration in the day and weekends. Did you and your partners do a complete business plan?
