The place is called Old Airport Road because that area used to be Singapore's very first civil airport, Kallang Airport, from 1937 to 1955. This is way before when Changi Airport first opened in 1981.

Typical soya beancurd stalls will sell soya bean milk, chilled grass jelly and grass jelly drink as well. Some of these stalls freshly make the soya beancurd themselves, using Calcium Sulfate (gypsum) as the coagulant. Such stalls serve the beancurd hot or at room temperature with sugar syrup. Sugar syrup is added before the soya bean milk. Soya bean milk can be served with ice (not recommended because it is very diluted) or warm (highly recommended because it is just the right temperature). Grass jelly and its drink are served chilled. I would highly recommend those stalls selling both soya bean milk and grass jelly drink, like the one at 18:14.

History of the Old Airport Road Hawker:- One of the draws to the Old Airport Road Food Centre in Singapore is that it’s a historic attraction in itself! The complex was built in 1972 as a home for the hundreds of street venders outside the closed down Kallang Airport. An estate was built with low-cost housing in 1955 on the old airport grounds and this is where the hawker stalls would congregate. It wasn’t until the Hawker Centre movement in the 1970’s where the new building was constructed that you see today. Old Airport Road Food Centre now consists of over 160 food stalls! It’s history and number of different food options from around Southeast Asia make it one of the oldest and largest hawker centres in Singapore. There is also a shopping area on the 2nd floor with miscellaneous stores and items. Sugarcane Juice:- Sugarcane juice is the liquid extracted from pressed sugarcane. It is consumed as a beverage in many places, especially where sugarcane is commercially grown, such as Southeast Asia, the Indian subcontinent, North Africa, and Latin America. Sugarcane juice is obtained by crushing peeled sugar cane in a mill and is one of the main precursors of rum. Char Kway Teow:- Char kway teow (sometimes also spelled as char kuey teow, Chinese: 炒粿條; Pe̍h-ōe-jī: chhá-kóe-tiâu) is a stir-fried rice noodle dish from Maritime Southeast Asia of southern Chinese origin. In Hokkien and Teochew, char means 'stir-fried' and kway teow refers to flat rice noodles. It is made from flat rice noodles (Chinese: 河粉; pinyin: hé fěn; Cantonese Yale: hó fán) or kway teow (Chinese: 粿條; Pe̍h-ōe-jī: kóe-tiâu; pinyin: guǒ tiáo; Cantonese Yale: gwó tìuh) of approximately 1 cm or about 0.5 cm in width, stir-fried over very high heat with garlic, light and dark soy sauce, chilli paste, whole prawns, shelled blood cockles, chopped Chinese chives, slices of Chinese sausage, and bean sprouts. Other common ingredients include fishcake and belachan. Hainanese Chicken Rice:- Hainanese chicken rice is a dish of poached chicken and seasoned rice, served with chilli sauce and usually with cucumber garnishes. It was created by immigrants from Hainan in southern China and adapted from the Hainanese dish Wenchang chicken. It is considered one of the national dishes of Singapore and is most commonly associated with Singaporean cuisine, being widely available in most food courts and hawker centres around the country. Variants of the dish can also be seen throughout Southeast Asia, particularly in Malaysia and Thailand, where it remains a culinary staple. Soya Bean Curd:- Tofu, also called bean curd, soft, relatively flavourless food product made from soybeans. Tofu is an important source of protein in the cuisines of China, Japan, Korea, and Southeast Asia. Bean curd, also known as tofu, is made out of soybeans that have been soaked, ground, and pressed into a tender block of protein. Bean curd is nearly tasteless by itself, but it soaks up the flavors that it is cooked with to create tasty dishes that have a variety of textures. Soya Bean Benefits:- •Good source of protein. •Lower in saturated fat as compared to meat. •Lactose free and hence people who are lactose intolerant can consume it without any undesirable symptoms (e.g. diarrhoea). •Good source of calcium. •A source of isoflavones, which is an antioxidant that may be beneficial for the body.

Proud of you both. You did not fall for those tourist traps… like eating the overrated chicken rice in Maxwell Food Centre, etc etc. That char kway teow: I knew that it would be spicy although you said ‘Less chilli’. It happened to me ( an elderly local). I found it too spicy although I stressed that I want very very little chilli. So during my future visits I said ‘ No chilli’. Anyway, my favourite char kway teow stall is somewhere else

Singaporean here. Absolutely love my hainanese chicken rice. And yes, on some days I mix the black sauce and chilli sauce into the rice (cooked from chicken broth, sesame oil and a bunch of other ingredients giving it its fragrance), which elevates it into another level of flavour. On some days, I leave out the black sauce. But the chilli sauce, ALWAYS.

The point of chicken rice is the rice. The chicken is boiled with ginger garlic and spring onions and then the rice is made with the resulting broth and fat. I’m simplifying but that’s generally it. You should try the rice by itself too. You can also ask for extra rice when you order.
@DavidKearns4

Exactly. It's chicken rice and not "chicken with rice", the rice is the star of the dish. Also you can usually get a set with bok choi or kailan, which is my preference.

The Char Kuay Teow you should try the black one with chili. Hainanese chicken rice is correct, chili and dark sauce together with the chicken meat and rice. Besides the bean curd, you should try the Chendol too. Normally when we drink freshly squeezed sugar cane juice, we don't add anymore sugar instead I like to add a piece of lemon.

bingo on mixing the black sauce and chilli sauce! (p.s. sometimes i put abit of the black sauce in the broth to make it taste stronger) . Hainanese Chicken Rice is white because it's steamed. The other one is Roasted Chicken Rice, less soft and abit dryer compared to the white version. The rice is cooked in chicken oil broth.

For $4 Hainanese Chicken Rice, I must say that's A LOT of chicken meat given!! Chicken Rice is available at almost every hawker centres, but not for Char Kway Teow, (meaning fried rice noodles) so most people will prefer to go for the Char Kway Teow unless they have a preference for rice. The white version of Char Kway Teow is less common and not many places have that option, usually is the black (sweet sauce) version available. The beancurb stall is a legendary one cos it sparked off a chain of franchiese stalls about a decade ago, all started from this flagship stall at Old Airport Road (there was an airport nearby last time and this road was thus known as Airport Road). And yes, the queue for that Michelin-star Char Kway Teow stall (name: Lao Fu Zi which is a cartoon-character created by Hong Kong cartoonist) can be ridiculously long during peak hours.

I mean those that says that is because they forgotten to get their seats and they are sour about it. I mean think about it, I guess you did see that usually these food centres that have people who does that comes in groups. They can easily get one of their friends to take care of the table. That is technically right to ask someone to guard the table and seats. The tissue just replace the person so that he or she could buy their food too. It represents the same thing even though it doesn't seems like it.

You can customise the sugarcane drink to your own preference, although you will have to pay more. Customisations include no ice, add lemon, add preserved sour plum. I would personally go for no ice and add lemon because the lemon helps to balance the sweetness and mask the grassy taste from the sugarcane. For the Char Kway Teow dish, the clams that the female stall assistant mentioned are actually blood cockles. Blood Cockles are an essential ingredient in Char Kway Teow. I believe there are people who even request for additional cockles. There are Char Kway Teow stalls that still use Pork Lard, so the Char Kway Teow dish will contain a few pieces of the Crispy Pork Lard as proof. The bits of ingredient that you were unsure of is actually scrambled eggs. Eggs are cooked first before the other ingredients. Cockles are the last to go in. For Singapore Hainanese Chicken Rice, there will always be a bowl of soup provided for each plate of chicken rice served. The difference in price of $4 or $5 can also be from the choice of chicken parts, with the breast meat being the cheapest at $4 while the thigh and/or drumstick meat is the most expensive at $5.

well.... it is where "cane sugar" comes from xD You need to try the real traditional Soy Bean Curd. The store you visited is more like a pudding than the traditional bean curd. I like mine served with soy bean milk instead of sugar syrup.

Putting tissue or anything down to reserve (chop) seat is perfectly alright here. Noone will comment that action is selfish especially during peak hours.

Oh, really?? We were told by some of the Singaporean people that definitely we should avoid doing it since it’s not respectable 😅

@@JayandKarolina Thats the idea of reserving seats during peak hours... it has been an unwritten culture here for 4 decades... one of the uniqueness of Singapore. And noone ever commented or complain. I guess those who said that are new Singaporean.

Using tissue to chop seat is only happened in recent decade.. we used to chop seat with our personal thing like pagers, bags, wallets etc during our olden days. Tertiary students will chopped seats using their laptop, tablets in the campus.

too much of the sauce. not meant to dip it in. but rather, scoop a little and mix with the chicken and rice and wat together with the chili.. all sauces should only be in little portions.
