To Yvonne and Editors: RU-vid had an outage last night impacting uploads -- it might be worth re-uploading this video to see if rerunning the processing causes the glitches to go away. (But check your original first to make sure it doesn't have the same glitches!)

cmiiw but you dont really need to put plastic wrap when you are proofing your dough. I noticed this in other videos with dough too. I think the cloth over it is fine.
