Really pleased that you enjoyed the video. In answer to your question, no the C maj7 isn't a mistake, although this substitution is less common in more traditional flamenco playing. I won't go into too much theory but at a basic level: - A Cmaj7 chord is basically a C chord but with a major 7th (the note B) added into the chord i.e. it still has the basic ingredients of a C chord (the notes C, E and G) + the major 7th (B). As such, there is no reason why it can't be used to function in the same role as a simple C major chord in the context of the Por Medio Andalusian Cadence even though it makes use of a note (B) which is a note not normally used in this key (it'll just give you a different "colour" to explore). It's worth mentioning that some people like this "colour" used in this context and others don't but ultimately there's no reason why you can't make use of it given that it's the function of the chord that matters and in this sense a Cmaj7 chord works just as well as a C chord at a practical level. -Regarding your question about potentially using a C7 to function as a C chord. In more traditional flamenco playing this is common. Again I don't want to go into too much theory but at a basic level a C7 also has the basic ingredients of a C chord (the notes C, E and G) but it also makes use of a minor 7th (Bb). As such, it can also be used to function as a C chord in the context of the Por Medio Andalusian Cadence in much the same way that the C9 is often used. In short, in both instances (C7 and C9) the chords are not being used in the manor they would commonly be used in a Western theory and harmony context (to create a perfect cadence onto an F chord) but rather to function as a type of C chord that's job is to take you to the Bb chord.
