Flatbread - Viking Food and Cooking
Flatbread is a type of bread that is thin and usually has a round or oval shape. It is typically made from a simple dough of flour, water, and salt, and it can be baked or cooked on a stovetop. Here is a recipe for homemade flatbread:
Ingredients:
3 cups of flour (any kind)
1 cup of ale, buttermilk or jogurt
1 teaspoon salt
Instructions:
In a large mixing bowl, combine the flour and salt. Add the ale/water and stir until a dough forms.
Knead the dough on a lightly floured surface for 5-7 minutes, or until it is smooth and elastic.
Divide the dough into 6-8 equal pieces. Roll each piece into a ball and then flatten it with a rolling pin or hand until it is about 1/8 inch thick.
Heat a large skillet or griddle over medium heat. Brush the surface with a little olive oil.
Place a flatbread in the skillet and cook for 1-2 minutes on each side, or until it is puffed and lightly browned. Repeat with the remaining flatbreads.
Serve the flatbreads warm, with your choice of toppings or dips.
You can also customize the flatbread by adding herbs or spices to the dough, or by brushing the top with a mixture of herbs and spices before cooking. Enjoy!

Bread made with ale! I had not thought of doing that. I must try this. I like the new red tunic; it is very smart. You should make a video on brewing in the Viking Age. That would be brilliant. Also, maybe one about packing supplies for the journey. Thanks for the great vid 👍

Great video. A nordic food historian told me that they would soak the oat flour like porridge and let the ground grains swell first before they added more ground oat flour to make the flatbread. It gave them a softer texture. I am sure the old travellers would do it the way you portrayed it in the video, But the method that the historian described might have been used more at the homesteads where the women were able to control the soaking time and create the softer flatbread.

in the early days of bread making the flour water mixture made bread but they also made yeast and they used the same wooden spoon to mix beer and the yeast helped with the bear then down the years the woman would have used the yeast from the beer to help the bread rise.Then additional baking powder makes it rise and a lighter bread.I sometimes use Guinness it makes a really nice bread.

Have you tried one of the spiral grills? I know there is a debate about what they were actually used for but I like cooking bread on mine.

No I did not try it yet. I have it in mind to forge one in the future someday. Maybe in a form of a snake. Have to do some reserch first. Do you know what find is it based on?

The leg wraps are also good for protection ( thorns, ticks,..) not just as leg warmers.

@@RavensOfAsgard Yes of course. We use it for the same thing especially when hiking and foraging for food. It helps keep the bugs, dirt, rain, and thorny bushes away. But we do ours fashionably with embroidery and beads. 😁👍

Indeed😉 you should always boil water before using it. We have a lot of springs with fresh water but still. Once we drank straight from the stream and then we find out there was a deer corpse in the water upstream, so you can be never sure.

You perform better when hungry. When your belly is full, blood is pumped into the gut to fuel digestion, corresponding drop in blood flow to the brain. This is just enough to avoid low blood sugar. Stay safe.

We made a mix: 1 cup buckwheat flour 1 cup oat flour 1 cup wholemeal flour. You can also use barley flour.
