I follow Sophie on instagram and I though that I've seen her do this except she started on the back section first, then worked forward. It may not make any difference all, but her hair always looks great.
There's a technique that works with some gels that turns it into a foam but it has to have some surfactant in it. I forgot who it was but a user on Instagram showed this hack with a foam bottle by mixing a small amount of gel and water to get more even coverage with way less gel. Seems like this hack would work well with this flip section technique
