Crustless Quiche:
- spray a pie plate with cooking spray. Chop & add a variety of vegetables that you might have on hand - 1/4-1/2 Cup of each: Spinach, mushrooms, onion, tomato, feta, shredded cheddar. Layer the veggies in the pie plate. Crumble Feta & shredded cheddar on top of the veggie - 1/2-3/4 C.
- whisk 6-7 eggs in a bowl (add up to a 1/2 C of whipping cream if you have it hand) - season with pepper and your choice of other spices.
- Pour eggs over veggies & bake 350 15-25 mins depending on your oven. Make sure egg mixture doesn't jiggle in the middle.
- slice & enjoy!
