The ingredients are designed for a cake with a diameter of 19 cm, a height of 7.5 cm, and a weight of 1600 grams.
Royal cake ✧ no flour
Cake dough
It is baked in an oven preheated to 180 degrees Celsius for 35 minutes.
+/- 280 grams (8 pcs.) Proteins
270 grams of caster sugar
300 grams roasted peanuts
A pinch of salt
Cake cream
+/- 145 grams (8 pcs.) Yolks
150 grams of milk
100 grams of sugar
150 grams dark chocolate with 50% cocoa content
200 grams of butter (add 50 grams to the custard base / 150 grams - whisk)
Sprinkle (layer) for the cake
200 grams roasted peanuts
Peanuts can be substituted with almonds or walnuts if desired.
