Our favourite daily tea is made of elderberry blossoms with fresh lemon juice and honey. It is so fragrant and so very tasty tea! It is fine hot, but we love it cold, along the day. Greetings from Romania, Europe. You are awesome and everything that you do is just great!
Hi from Ontario, Canada! Your channel and content keep my dreams of a simplier life alive. My five year old son just watched this video with me. We just made him some tea..he wants to try different ones now. Inspiring!
I’m so happy you uploaded today. Your videos have saved my mental health during this quarantine. I’m grateful for you and look forward to creating my own homestead in the near future.
Oh I loved this👏👏👏 I’ve been doing this for the last two years. Like you, I thought there was some mysterious special thing I had to do😅 but now I make tissane or herbal bends from my garden all the time. I often gift them to friends & family at Christmas time. My favorites are Linden flowers (I have two huge trees). I’m also loving lemon balm as well as hyssop. In the fall I gather gobs of rosehips...they’re so good for you! Anyway...thanks for sharing😊
Bonjour Shaye! I'm just starting my garden since we moved in recently but we already are enjoying mint. Thank you for the lovely videos, I recently found your channel and it is delightful. Cheers from Provence, France. 🌞 Claire
Glad to see you bringing light to herbal teas! We enjoy mint and lemon balm multiple times a week! I've never thought about doing rose petals, definitely going to incorporate that. Thanks for the inspiration 😘
Hi Shaye! I planted what you put in your tea this year in my garden. I am totally happy. I drink the tea nearly nightly and it is just magical. It really seems to deepen my sleep and refreshes me. Super cool. I didn't get a chamomile harvest but I have blossoms stored. I haven't added that to my tea as yet. Thx for the blessing of the video, the harvest and the direct affect it has had on my life!
Your garden is looking BEAUTIFUL! We are in New Zealand so heading in to winter so very different things going on in the garden, always love seeing your videos :)
The flowers and leaves look so pretty collected into your basket! That first plant you stopped at, you called it bee balm, and normally I've only heard that for a couple of species of Monarda, but the plant in the video looks like Centaurea, probably Centaurea montana, mountain cornflower or sometimes called bachelor's buttons (it is a cousin the fuller flowers more commonly known as bachelor's buttons). I have never heard it called bee balm, but common names are slippery like that, so I wondered if it was a regional name for this flower. Oddly, people over here say honeysuckle when we mean columbine - it is the strangest thing but very widespread! I grew up saying it, too. So much fun to see these spring blooms and remember it won't be long.
What a great morning to upload. We got our 3 lil pigs yesterday. I moved the baby chicks to the grass. Checked on the pigs, sat down for a drink, and here you are, MAKING A DRINK!!!!
My daughter and I made a tea with lavender, mint, chamomile and lemon balm. (You can also use lemon verbena, both are wonderful.) It was delicious! The video today was just really lovely. Tell Stu great job on the music. The Viewpoints music just captures the magical feeling of your homestead in the mountains, it adds that special lovely mysterious atmosphere.
Oh that is a dream for us: cottage garden! We have plenty of spaces both front and back. However, it's the back that we would have the treasured herbs and edible flowers. In front is pretty, scented and for high desert life, heat tolerant. We do not plan on staying here as I told hubby I want someplace with green.
hello shaye, love your videos, thank you! just wanted to ask/ comment about the “bee balm” you mentioned. i have the same plant in my garden and i believe it’s centaurea montana and i don’t think it’s edible. i think what’s more often called bee balm is in the mint family- monarda. not 100% sure but aim always interested to learn more about plants, so i thought i’d share. i love drying chamomile and mint and lavender for tea too to bring a bit of spring into winter for a relaxing mug before bed 💛. also love to add dried elder flowers to this mix!
Kathleen McGorman What she was picking is Monarda (bee balm), I ordered some from Bluestone Perennials. It may look a bit similar to the plant you are referring to.
I bought a rapsberry bush and a David Austin rose just to make this tea. I have enjoyed it all winter and I highly recommend! Thank you so musch, Shaye!
I love this. I'm from the UK so obviously our chamomile comes later than yours but the combination of chamomile, lavender and lemon balm makes a delicious bed time tea. 😊
I don't know why I hadn't thought to dry my own tea, such a good idea. I just bought a dehydrator at the end of summer last year, and I'm learning so much. Thanks for sharing!
Love your country living. Where do you get your baskets lovely. The one that you carry to collect your herbal tea I think that is beautiful looks like a tree help you carry things
The content of your vlogs are so calming and relaxing to watch. There is such a romantic quality to your videos. You can tell that you take the time to appreciate the simple things in life. The only negative thing I have to say is that you don’t post often enough! We need more lol! Much love to your family😊
Hello from Tyler, Texas, Rose Capital of America. I just found your channel and love it! I love a mixer of hibiscus and cornflowers and rose hips. Also lemon balm and rosemary.
Lovely! It now seems completely obvious - I've heard of raspberry leaf tea, but it never occurred to me it would be just raspberry leaves!! It's cold here now so I'm going to go grab some from the garden and see what it tastes like! I have the most beautifully scented roses out there so I'll give that a go too. Thanks for the inspiration! 🙂
I add hyssop to my tea blend. Nettles are good too. Lemon verbena, lemon balm, tulsi, lavender flowers all wonderful additions to a mix! Love that David Austin Rose! I used to have a Gertrude Jekyll in a previous garden, and its on my list again. They are stunning!
I love nettle, raspberry leaf, mint and dandelion and drink those regularly. Not to mention chamomile lavender and hibiscus tea. I think I will start growing these myself. Thank you so much for sharing and inspiring!
I'm a newish subscriber to both you and Angela. I'm loving all your videos and your podcast is amazing! I've been binge listening while doing dishes or folding laundry. I feel like I've found "my people" 😊🌷
Beautiful as always Shay . That's such a great idea , I used to get fresh tea from Burlington VT. I broke my French press😳 I'll have to get another. I found mint to day in my new old cottage garden. Thanks for sharing. 😘 JO JO IN VT 💕😄
Your garden is lovely. I love all the paths. Each time I watch your videos, it seems like your hair is a different color. You really change it often. The blonde looks very nice.
Shaye! How do you figure out what to do with the ugly things of life? Piles of kid shoes? technology stuff? Just clutter and things that you don't know what to do with? You have so much loveliness in your house and yard and I know it's very intentional, but there MUST be areas that are less lovely, right? I feel like i"m surrounded by so much unloveliness all the time And I'm too busy with just keeping it all at bay that I can't seem to figure out how to create anything better... Any help?
Also lean into things that seem "unlovely." Piles of kids shoes show a happy family, technology shows an ability to connect with others, ECT. Of course organizing and downsizing but the ordinary is what makes up the beauty of our lives
I love picking fresh herbs, and just wandering around in the garden, marvelling at every plant that has come up in this exciting spring time! The flower you picked at the very beginning - the flower you call bee balm, that thing grows like weeds (and kind of is a weed) here in Sweden and it's actually *mountain cornflower* not bee balm (I recognized it when you said it has kind of a tropical scent, and it's so true! I used to love smelling them as the smell reminds me of pineapple). I had no idea they could be used for tea. I googled it now and found that this flower was once used for medicinal purposes but that it's kind of forgotten nowadays. I must try it out, thank you!
I found this fascinating I love to watch these type of vlogs. Can you any type of rose petal although Gertrude jeckle is one of my personal favourites xx
What a delightful video - such a lush feast for the eyes! When you were sprinkling the rose petals into your basket, I felt as if I could almost smell them. 😉🌿
Two quick things--1) Zloty chamomile from Baker Seeds--the blossoms are about 3 times the size of regular chamomile. 2) I'd love to know about a tool for chamomile flower collection. Is it kind of like a blueberry rake? Thanks. Oh, and I also pick linden blossoms for drying for tea.
Just found u on you-tube! Love the calmness of your voice and this recipe for using my herbs! Been making tea for yrs, never combined the ingredients.....thnks for recipe/suggestion 😊 🌿🌱🍯☕

I never thought making tea could be so easy! I love tea, but hate spending so much on it! I love your videos, podcast, and Blog! Also, where did you get your dress?
so beautiful and relaxing. I love growing herbs, and that's a good idea to make your own herbal tea blend. Can you give me tips on how to dehydrate herbs for tea and keep them all winter? I dehydrated a bunch of mint leaves last year, put them in a mason jar with a lid on, and then a month later they had turned all to mold! There must have been some moisture. How do you store your dried leaves to keep them fresh?
Hey! if your wanting to dry them out for storage and you don't own a dehydrator the best method is to take a large tray and lay out your leaves on it in a warm dry space. Make sure you aren't piling your leaves up, this is what can lead to mould forming. depending on the heat of your house and the time of year it can take anywhere from between a week and a fortnight for them to dry completely. You'll know they are done when they are dry and crumbles between your fingers. you can also tie small bunches and hang them upside down while they dry (this is a good method for flower petals, simply tie the whole flower head to a piece of string and hang it somewhere. When your making your herbal tea ALWAYS put a cover on top of the container your making them in. the best thing is to make them in a pot as its what they are designed for. if you miss this out a lot of the flavour and goodness of the herb, leaf or petal escapes in the steam, while in a pot or even a saucer over a cup that steam condenses and runs back down into drink. This is extra important if your using your herbs for medicinal properties.
