A really good tip I learned from another cooking/baking channel TV show, when it comes to lemons and lemony flavor, dont use butter and lemons together in a recipe, try using oil instead of butter because butter inhibits that punchy sour flavor you get from lemons in baking. That tip really works.
Would the sour cream have the same impact as using butter than? If so is oil the same substitute for sour cream as well? What would the butter/oil ratio be? Same? Thanks for your tip.
@@JupiterMoon19 Sorry it took so late to see this reply. I never tried using sour cream but I think it has something to do with the kind of fat that's in dairy. I made some olive oil lemon bars, lemon muffins both using olive oil and omg the lemon flavor really truly comes through, but when using butter the lemon flavor is dull, you can barely taste it. Adding more juice just ruins the batter and zest only works when you zest directly over milk if you're using that as a liquid in the recipe before adding it to dry ingredients
Came out awesome, I had blueberries and strawberries I needed to use, so added the blueberries to the muffin mix as well as a tbsp of vanilla, and made a lemon vanilla whipped cream, strawberries on top 😋
The muffins turned out really delicious! The muffin top had a slight crust, which paired really nicely with the soft, flaky, and moist rest of the muffin! The muffins were not overly sweet, which I really liked, and they had a good, light lemon flavor. I do want to try adding the lemon extract next time, since this time, I didn't have it on hand. Overall, I am very pleased! Thank you for such a yummy recipe!

Just tried it today for my son’s birthday. Kids all love it! The texture is indeed very soft and it’s a good blend of sweetness and freshness, also with a bit taste of cream. Really nice!Thank you Sam for sharing! I’m your fan now ❤

Question.... I know you carefully research your recipes which is amazing. Do you think you can get more of a lemon flavor by letting the lemon zest sit in sugar to extract as much of the limit oil from the zest as possible???
It’s possible. With some of my recipes when the method is conducive to it I like to toss in the zest when I’m creaming the butter and sugar to help get more flavor from it that way
What is the brand of the zester that you used? I need a better one because I feel the one I have doesn't give me nearly as much zest as I actually need. If you could tell me that would be great, thank you.
Unfortunately I'm not sure they would turn out if you add the extra moisture of the juice. The zest also adds a lot of flavor so I just can't be sure they would turn out and be very lemony. :(
You have two muffins here ready for zesting....🤔 (I was trained as a journalist. I catch everything.) I'm going to see if I can find some small blueberries and follow your recipe. I want to add them to the batter after coating them with some flour so they don't all sink. And then do the same icing. BTW I am a huge fan
