The pancakes are made with the egg whites whipped up to a Meringue and mixed with some flour to make the pancakes 😛

Its soufflé they make a pancake batter and a separate eggwhites beaten with sugar to yes a meringue consistency or marshmallow then they fold the two mixtures together
