Recipe : Pan size :28*28cm,the height of scone is about 2cm,6 scones All purpose flour 300 g ( you can either replace with bread flour or cake flour) Salt 2 g Baking powder 7g Unsalted butter 90g Caster sugar 70g Milk 80g Egg *1 (50~65g with shell) *Dried grape 70g Rum 30g(or soak the dried grapes in water, add them in after dried) *Or replace the dried grape to cranberry 30-50g, no need of rum. *Or replace to other dried fruit, or nuts and chocolate chips if you like. For brushing the surface: Brush the yolk liquid ( or whole egg liquid) 180°C 20~22mins Middle-lower rack of the oven PROCESS 1、Mix the four, sugar, salt and baking powder, mix well. 2、Add the frozen butter, rub them to the condition of almond meal, it will look like small grains. 3、Add in the milk, egg, and dried grape, mix and gently press them. Kneading is not needed because it will form gluten. Mix till there are no dry flour around. 4、Put in refrigerator for 1-3hrs, or freeze 30mins (flip it in the half way) , let the dough relax, cool and toughen, so it’s easy to shape. 5、Knead to 2cm thick, cut them. It can be either circle or rectangular. 6、Brush a layer of yolk liquid (or whole egg liquid). The yellow shade of the yolk liquid will be slightly brighter and deeper than the whole egg liquid.
