Hi, can I know how long did it take for you to get that foam? I tried to make this but I couldn't get the foamy texture like you do... (Probably because I broke a little bit of yellow yolk when I separated the egg lol)
Hi Yeah, exactly, If the egg doesn’t separate yolk from the white perfectly, it is difficult to make a stiff peak. Well ,,, I think the mixing time was about 15 minutes. ( or 20min maybe) TIPs for making a stiff peak are, first, using cold eggs and cold tools , and second, the tools which you use are free of water and oil. Last, keeping mixing as fast as possible without stopping. Take care that your arm isn’t not to hurt lol hope you enjoy cooking~:)
@@sawayakakitchen8184 thank you for your response! That explains a lot lol Since I was using a bowl oily with olive oil (was making french fries at same time and did not wanted to use another bowl) and a bits of yolk. Was mixing like crazy for 30min straight like the dumb person I am.
