I love this! Thank you for the idea and I also loved hearing about your family. I hope to see more of your canning ideas and recipes. Most of us understand that government approved method isn't what our grandmother's did. It's also not what the Amish have ever done. I've been canning for over 20 years without one accident as far as food poisoning is concerned. I use my own common sense and I welcome other people's ideas. It is amazing that people actually have survived for ages without the safety guidelines we now have implemented for us to follow. I simply could not begin to imagine that kind of heartbreak. I have been a hairdresser now for 40 years. I call myself, retired, but I still have quite a few clients that I have done during my entire career, of which I simply cannot give up. They are really like family to me. I love the name, Belle! I must live not far from you - as I remember the late freeze we had this year! I tried to cover as many things as I could (azaleas, hydrangeas, etc.) because everything was either already blooming or just about to bloom. We lost a lost of gorgeous flowering bushes to that nasty freeze! Enjoyed your video - the soup looks delicious : )

Looks fabulous! I think the world would be much different if we all grew our on food again. Those were the good ole days. I miss Sunday lunch after church at my Mawmaws, the best spread ever.

You are so right Johnny!!! I buy vegetables from a local farmer. The farmer I used to buy all my stuff from retired from age. I was so heartbroken!!! His vegetables were so beautiful and always so clean. No worms or anything else as such. I sure miss being able to buy from him, but the other guy I have known all my life and now he's speaking of retiring!!!!!!!!

First time watching but so happy you did soup cause I want to can some. I have a lot of carrots so this really helped me know what I wanted to do. We love soup.
I am so happy you liked my video. Only thing is if you are using meat in your soup, you may want to use a pressure cooker. I didn’t use it in making my soup because I added quite a bit of tomatoes. Not a lot of meat in ratio of the vegetables I used. You have to use a pressure cooker when canning meat because it’s low in acid and would not preserve well with a water bath. But with mine having so many tomatoes, which are high in acid, and not a lot of meat, I have never had an issue with canning it with a water bath. You really do have to be careful about it, and make sure it’s safe for you to consume.
I did make the soup but I knew I had to have a lot of tomatoes in it. I had 13 quarts and 1 pint. All has sealed. Real happy with it. I had done this before but I didn't have enough tomatoes in it. I was in early 30"s but I'm old old now.😄😃😀

When you place the jars in the canner do you have something to separate them from the bottom? Not sure what I'm suppose to do. Maybe other commenters can answer this as well.
I do not have anything in the bottom of the canner. The jars should be able to take the heat. OK… i’ve never had an issue before with them. One of my pressure canner does have a rack that goes in the bottom of the pot that keeps the jars off of the very bottom of the pot, and when I am doing pressure canning, I have used that and I have also done it with nothing underneath the jars even with the pressure canner. The problem is if you are canning very much meat in your soup, you run a risk of botulism if it is not cooked under pressure. I have a large amount of tomato in my vegetable soup, which is very acidic. That helps to eliminate some of the riskwhen canning with meat. I don’t use a lot of meat in my soup because of the risk of botulism. If ever I am in the least bit of doubt, I use a pressure canner. Thank you for watching and for commenting! Have a great day!🥰
I’ve kept mine for a year before. If you use very much meat in your soup, you should pressure can it. I don’t have a lot of meat in mine, and I’ve never had a problem with it. I also use a good bit of tomatoes which gives it a higher acid content.🥰
I canned cabbage with ham in it and water bath lt . One did not seal and I did not notice 2 week later when. I put it on the shelf it was sealed now I am scared to can may large pot of veg soup.
My suggestion would be to process it in a pressure cooker just to be safe if you’re uneasy about it. My soup was fully cooked when I canned it with a water bath. It had a lot of tomatoes in it which the acid from them helped with the meat since it has no acid. If you are canning anything with very much meat, you should always process it in a pressure canner. Are you referring to the water bath method? If so, the answer is no. When you can fresh vegetables, they usually require a pressure canner method. If you were to use a water bath method with fresh vegetables, you would need to cook them a really long time. I have canned green beans using the water bath method, and they never were successful for me. I have always had success with using a pressure canner with fresh vegetables. The vegetable soup video that you have watched, was fully cooked when I jarred it and then put it in a water bath. Even with that, if you have much meat in what you’re canning, you should always use a pressure cooker, not a water bath method. With my soup that I canned, it did not have a lot of meat in it, so the acid in the tomatoes helped to preserve the soup. I hope this answers your question.🥰
@@simplyjoyfully The pressure canner is something you should have a healthy respect for, but if used properly, it is a wonderful tool. You just have to make sure you monitor and control the amount of pressure it produces, and make sure absolutely NO pressure remains when you remove the lid. If you follow those rules, you will be a happy "canner"!!!!😊
It is Aug. 7th, 2023, and I have been wanting to preserve vegetable beef soup. I LOVE THIS! I was right. For me it is better to cook the soup entirely and the can it. PLEASE post more canning videos. Hi Jessica! What a joy it is to hear from you! I have canned soup this way for a long time and have never had an issue with it. However, if your soup contains a lot of meat, I would advise to pressure can it. Otherwise, if it has a little bit of meat with a lot of acidic vegetables, such as tomatoes, I would water bath it for 20 minutes after totally cooking it, jarring it, and then water bath it. that way, you should be totally safe. Best of luck, and hopefully I will be able to post some other canning videos at some point. I have gone through breast, cancer, and several surgeries, which has delayed me from being able to video my canning process. Hopefully next season will be much better for me to be able to do this! If it is fully cooked I would think it would be okay to can. Some things may not hold up as well as others, texture wise. I mostly can vegetables and have done that all my life. When you do a water bath, which is the method I used with my soup, I let it come to a full boil, and then timed it for 20 minutes. Make sure your jars are covered completely with water.

@@eversosophi9653 Yep, they are a one time deal!!! Just make sure the jars are not too full. I really should have only filled mine to the bottom of the neck. That way they won't expand and prevent the seal from sealing. I actually lost one of my quarts, because I filled it too full and it couldn't seal.
I am so sorry, but I do not use a recipe for my vegetable soup! I have always just done it like I demonstrated in the video. You can add or take away any ingredients you like and season it to your personal preference. If you have a lot of meat in your soup, you will want to process it in a pressure cooker. With all the tomatoes I used, I just did a water bath. My ratio of meat in that batch was a small amount, so the acid in the tomatoes help in the preserving if it. Meat is low in acid and normally you would use a pressure canner. I’m so sorry I don’t have a recipe for you.
Normally, if it had a lot of meat you couldn’t, but there wasn’t that much in ratio of the vegetables. What you have to be careful of is to have high acidity, which the tomatoes supplied that versus meat which is low in acid. I’ve made it this way for years and have never had an issue. You would NOT use a water bath if the recipe had a high amount of meat in it.
You can't water bath meat or vegetables....this whole video left me with my mouth gaping open...when she said she was water bathing them I couldn't believe my ears...then she did, for only 15 minutes !!...and did you see how hard she cranked those lids on?...and all the people commenting on how wonderful it is....holy cow@@sheliaheverin8822

The meat was fully cooked and I have never had a problem with it in the past. I would never can meat alone using a waterbath. The soup was fully cooked, hot packed into jars and full boil waterbath for 20 min. I have done this in the past, have eaten it, and have never had an issue.

I grew up poor, and never realized we were poor. I had 9 siblings. I am sure we are about the same age and I would dare say, you grew up with CANNED MEAT. My parents also water bathed RAW SALMON, as we lived on Lake Michigan. We had Venison canned as well. AMAZING WE WERE NEVER SICK!!! I worry about the younger generations; they just have never had to figure out how to survive. I came across your video by searching, Rebel Canning. All of Eastern Europe water bath cans soup and meat and everything, I guess Ball and makers of pressure canners just don’t have the same clout outside America and Canada… just like all your grandmas and great grandmas did. We know all about getting a good seal and adding extra acid and killing botulism spores at 250 degrees for five minutes.
