I almost never post but I NEED to take a minute and tell you how much my husband and I loved you on Bake Off and were rooting for you to win! Anyway, I'm new to making pies and was having a heck of a time rolling out dough so I decided to google and found this youtube. I was thrilled to see you on it and my dough look great! OF COURSE! I'm going to do this today, but add an extra step. I'm going to make an outline of my pie dish with a sharpie. Precision pie dough. 😊

So today I stumbled on to your RU-vid page, Thank You, I have been making pies for years but have always had a terrible time with a cobbler. NOT TODAY. I tried your method and it worked like magic. My husband is a happy man because he had a piece of beautiful blueberry cobbler tonight after supper. It was flakey and fabulous. Many thanks.

Where has this been all my pie-baking life? Mama's recipe for (veddy veddy stiff outta the refrigerator) cream cheese/butter crust received this treatment and I will always use this method from now on! *Clicks subscribe!*

Might I suggest you use cling film for the top layer. I made a pie crust today using that method and it works brilliantly. Just a suggestion!!

Hi Steve! This was a great video. I was supposed to make copycat McDonald's apple pies for my son for Thanksgiving, but the thought of flour all over my kitchen stopped me cold. My crust recipe is all butter; will I need to make any adjustments to your instructions for a good outcome? Thanks so much.

You will not. My pie crust recipe is also all butter…the paper method works great for all butter crusts.

It didn't come out perfect but it's better than any other one I've tried. I am confident that using this technique it will work out.

What thinness (thickness) pie dough need to be rolled out to? How to ensure we get the correct thinness?

Great question. I usually go for about 1/4th to 1/8th of an inch. As you roll it, be sure to stop right at the edges and don’t roll over the edge to pinch it. Take a paring knife and make a small cut in the center of your dough circle. You can pull it up a bit to check the thickness and then press the dough back together again to seal the hole. I hope this helps.

I got this 😊 I somehow got this massive gingerbread cookies recipe 120 plus cookies , some pretty big ? A 100 year old grandma recipe and I'm a grandma 😅 I have these wooden dowels or stakes that come with plants, there about 18 " long and drum roll ...... in-between 1/8" & 1/4 " thick 🤗 tada!😁 and I used a 1" thick dowel x 20" long as a rolling pin .

Perfect demo. Thank you. One question.... why the "music?" If you were doing this live in front of an audience you wouldn't have "go nowhere" music playing... so why online? It adds NOTHING and only DETRACTS from your message, IMO.

do you chill the shortening before making a crust?

I don’t use shortening when making a pie crust. Since shortening can never get solid when cold, I don’t think it would hurt…especially if your recipe also calls for ice water. That would keep the ingredients in a level playing field.

i call shenanigans. i tried to use parchment paper with a bit of flour and dough right out of the fridge as described - the paper sticks to the dough like nuts and when you try to detach it from the paper it just tears. over and over. how is that "foolproof"??
