What's up everybody today I am making Lomo Saltaldo a famous Peruvian x Chinese stir fry with Aji Verde Sauce (Green Sauce). Follow Along!
Aji Verde Sauce:
- 4 Jalapenos Sliced
- 1 Whole Garlic Clove
- Two Cups of Fresh Cilantro
- 10 Mint Leaves
- 2 Tablespoons Olive Oil
- 1 Tablespoon Salt
- 1.5 Cups Greek Yogurt
- 1 Whole Lime Juice
- 1/4 Cup of Water
Blend this up in a blender or food processor and save for later.
Steak Fries:
Steak cut your potatoes into wedges. Soak in water, dry and put in freezer until ready to air fry or regular fry.
Red Onions and Tomatoes:
Cut these into wedges and set aside.
Beef:
I am using dry aged Ribeye today for this recipe but you can use tenderloin on any other cuts of beef that are good for stir frys. Cube you beef into chunks and marinade.
Marinade:
- 3 TB Soy Sauce
- 1 TB Salt
- 2 TB Apple Cider Vinegar
- 1 tsp cumin
- 1 tsp coriander
- 1 TB paprika
- 2 TB Garlic Powder
- A dash of ginger powder
Let marinade overnight or minimum a few hours.
Make some plain white rice of your choice. Here I am using Jasmine.
Simple dish that requires a lot of prep and execution to make sure everything is still fresh when served.
