Freeze It February wouldn't be complete without a kid-friendly "pizza" option, would it? When I think of convenience food, pizza comes to mind, but I wanted a way to make a single-serving option, that could go from the freezer to the oven or air fryer, any time one of the kids was hungry for a snack. This calzone recipe definitely fills that role for us, and I think it might for you too!

I do the pizza kits also. Usually for Fridays. The crust is low carb Fathead pizza crust using almond flour and flax meal. Maybe i should play with turning that into calzones.

Our favorite pizza dough is the copycat pizza hut dough. I love the tortilla press idea very much too.

Jill, when you brought out the tortilla press I was convinced you are a genius. What a great way to evenly roll out the dough to a thin dough. You got the wheels turning for me. Calzones, breakfast pockets, pop tarts, sloppy joes, taco meat, pies. Genius I tell you genius. Two of my grandkids have celiac and one cannot have dairy. I wonder if there is a gluten free crust that would work for those kids?

I felt like a genius! 🤣 It seemed super obvious when we were testing, after I first attempted to roll one. It saves an insane amount of time, and I think it should work with any dough. @@thehometownhomestead I have family coming this weekend but I’m going to try this when they leave. I will freezer bank healthy snacks and meals for my grandkids when they come over. King Arthur is my favorite flour and their gluten free flour works well but I will have to test it to see if it will stay together when it is this thin. I will update you in this thread on the gluten free dough and what I made.

I like have a 'pizza kit' ready in the freezer too. I need to get all the ingredients rounded up and put into a container so I just have to pull that out and all my fixings are together. Right now the pepperoni has gone rogue! lol.
