French Onion and Mushroom Soup - Canning Video

Even though I am still working during this time, I do have a little more time on my hands than usual. I went into town to pick up things for ourselves and neighbors, and found some lovely mushrooms. This seemed like a great opportunity to can my favorite French Onion and Mushroom soup. I mostly use this soup in recipes - Beef Stroganoff, or over a chuck roast in the crock pot. It is so good! This made 18 pints plus enough for 2 meals. This is definitely something I want to keep stocked in my pantry!
You could half or quarter the recipe for a smaller amount, but if you’re gonna do it, you might as well do a lot!
Ingredients:
6 lbs mushrooms - I used white button and mini Bella’s, but you can use you’re favorite.
10 medium onions
1 small head of garlic
1 stick butter
2 Tbsp olive oil
1 Tbsp black pepper
4 Tbsp dried thyme
4 quarts stock (beef, veggie, chicken - use one or mixed)
1 - 2 quarts of water
1 750 ml bottle of Cabernet Sauvignon (or you could use an additional quart of stock)
4 heaping Tbsp Better Than Bouillon Roasted Beef Base
2 tsp pink salt
1 cup Clear Jel (not instant!) plus water mixed

My husband loves homemade thick mushroom soup. I love French onion soup topped with a couple of toasted croissant "layers" that have a slice of broiled aged swiss on top. I've got to try this recipe for a sauce, and a soup base. "That stuff!" 😂🤣. Worcestershire is said WORSE - STIR - SURE according to Ina Garten. I usually just say, or put on the shopping list = WURSTY SAUCE, like my all-Irish dad did☘👍.

We ate some with Gruyere cheese on top, and it was so good! But my favorite is to use it in recipes. And yes, “that stuff” trips me up every time I am recording a video. I can say it just fine, but NEVER when I am recording! 😂

I watched your video first on the canned beef stoganoff with the french onion and mushroom soup and wow. That inspired me to make that. So then I watched your video on canning the soup mixture and I will definitly be making that to can and thank you for your delicious recipes and inspiration. You are awesome and for your info on how to recan when your lids dont seal.

Like you, French cooks always begin with yellow onions when caramelizing onions for a tart or onion jam. In my experience, sweet onions become papery when you try to caramelize them using the traditional techniques. They don't seem to have the integrity of the humble ol' reliable yellow onion.

I think I’m gonna try this. I canned French onion soup but the flavor is not very deep or rich. I think the mushrooms is the key.

Yes, it can be frozen also. I am limited on freezer space, so canning works for me.

Did the 4 jars that didn't seal come from the same canner? That's just odd to have so many that didn't seal. Could it have been from the same box of lids? Hope the snow is going away, yet it is desperately needed for good ole planet earth. Stay healthy, be safe and many blessings. Morgan

This was a while back, but I believe it was the brand of lids. I didn’t have very good results with Orchard Road lids, so I now use them up with vacuum sealing storage. Yes, we really needed the moisture from the snow, and most has melted, although we still have drifts over 3 weeks later. Thank you so much for your watching and your encouraging words!

Honestly, I warm up a jar of this soup, with a pint of home canned beef. Then I put some sour cream in a bowl, and gradually add some soup to it to keep it from curdling. Then I mix that in with the soup/beef. If it needs more sour cream, then I add it in at that time. That’s it!

Do you have to use the clear gel to thicken? If it’s optional, even though though soup might be a little looser, I would like to omit. Thoughts?

You can always omit the Clear Jel or any thickener, then if you choose to, you can thicken when you heat it up.
