Freshly Milled Flour Pasta
2 and 1/2 cups or 500 grams Freshly milled flour of choice
(I did 1 and 1/4 cups or 250 grams soft white wheat and 1 and 1/4 cup or 250 grams kamut)
7 eggs
Mix together in a mixer until a dough ball forms.
Pull out the dough ball and kneed for at least 5 minutes.
When you can press your finger in the dough and it bounces back you know it is ready.
Let rest for 10 minutes wrapped in a dry cloth.
Make pasta of choice.
