Freshly Milled Flour Pasta
2 and 1/2 cups or 500 grams Freshly milled flour of choice
(I did 1 and 1/4 cups or 250 grams soft white wheat and 1 and 1/4 cup or 250 grams kamut)
7 eggs
Mix together in a mixer until a dough ball forms.
Pull out the dough ball and kneed for at least 5 minutes.
When you can press your finger in the dough and it bounces back you know it is ready.
Let rest for 10 minutes wrapped in a dry cloth.
Make pasta of choice.

I'm still drumming up the courage 😂! But my daughter's are all on board, so I'll have help. Thank you for highlighting those tools - I was thinking I'd have to buy the attachment for my Bosch. But no more! I'm off to find the links for the tools from Amazon. The one for elbow macaroni will be in my next order.😊

I'm so glad you showed up in my feed . BTW- I was not looking for anything wheat or pasta. But, the Lord has been moving me towards pasta and here you ARE! 😊. Breads- check. Pasta- next! Now, the grind for the berries- Fine, or bread setting? Thanks so much. 😊

For pasta you want it as fine as you can get it. You will love the taste and texture of hand made pasta!

@@realfoodgoodfood I'm back! 😆you know when dealing with flour, your humidity play a roll in your dough. The next time you make pasta, I'm curious as to the weight of your eggs- in grams. I just used 7 eggs and yeah, I think mine may have been bigger because, it never came together. Even after trying to hand knead, the ball kept sticking to my hand. 😂I had to add a couple of TBS of flour just to be able to knead it into a sticky blob.

Oh no! I'm so sorry! It's so hard to give exact measurements in a video like that, I can at least show what it should look like in the end. Sorry for the frustration. Were you able to use it for pasta?

This is fantastic! ...How would I cook the pasta if it were lasgna noodles though?

Thank you! I boil my lasagna noodles a few at a time for 3-4 mins then layer on the lasagna and they finish baking in the oven. They taste amazing! When I tried to boil many noodles at once they ended up sticking together.

I wonder if you can just let the Ank mixer knead the dough (vs hand kneading). Hmmm... Maybe you have tried?

I have, I feel the dough comes together better by hand, something about the texture just feels better to me.

I start it there to get the really sticky and messy part mixed, however, I feel you get better results in the pasta if you knead it by hand, somehow the texture is better.

Oh! And I just bought an Ankarsrum mixer and Mockmill in March and God has lead me to freshly milled flour in January. I never considered myself a cook or baker , but a whole new world has been opened to me. I’m so excited to have found you who uses the same kind of equipment. 🎉

I don't have the Ank pasta attachments, they cost more than I was able to spend so I bought a Marcato pasta maker. I have a video on that though!

@realfoodgoodfood I wanted a flaker, but the LORD led me to the pasta maker, (He's so thoughtful)...And the grains can be sprouted and wet, served shortly afterwards-- win, win!

I cannot tell you how grateful I am for your channel. I’ve been successful at bread & sourdough with fresh milled wheat. I’ve wanted to do fresh milled pasta for months. Thank you! It's such a small amount I feel the mixer doesn't do it as well. I think the heat from my hands helps it also.
