Milhan, thanks for the recipe. This looks soo yummy. My family loves fried mogo. We’re from Tanzania we call mogo. There local people roast mogo on charcoal then slit in the centre and sprinkle with salt chilli powder and lemon soo good it’s a street food, we miss that. Here in Canada we get fried mogo in East African Indian restaurants.

I miss it too much! and the Swahili is 'mhogo'. So cool to learn of 'mogo' which is a closer name than yuca or cassava.

My favourite snack for Sunday evening. I’ve never boiled and deep fried it but i steam them and and shallow fry. They still tastes very good but i think this way it becomes more crispier and even more tastier.

oh nice! the street vendors in my childhood in Tanzania would add a cup or two of water to after they put cassava in oil on medium heat. No prior boiling or steaming is done and they turn out very soft inside and super crispy outside by the time all the water has evaporated from the fryer. It think it is a combination of boiling and confit-ing initially and frying at the end when the temperature is higher and all water has evaporated, perfect for cassavas and definitely a time saver.

@@MilhaanHome not exactly, it’s made with green unripe bananas in East Africa! The Gujarati community made it spicy to suit their palate! It’s delicious but I have never found the exact recipe that my mother in law made!

How do I asked for Yucca to be cooked throughly? My local peruvian Restaurant that serves this sometimes gives us yucca that's dry, tough and hand hard in the middle. It's also white. Then on other occasions its beautifully soft and golden in color in the middle making it super yummy. Idk what to do help!

Which type of frying oil is good for Yuca fries? I think canola or peanut oil for better taste vs vegetable oil that's better for chicken frying. 😼

XRavenHairSexGod Good question! I like corn oil, sunflower oil or peanut oil myself. I prefer not to use canola oil or rapeseed oil as I don’t like the taste. Hope that helps!

@@smeets7393 There's grapeseed oil which is made from the seeds of grapes and rapeseed oil which is made from the tiny black seeds of a yellow flowering plant. I do mean rapeseed oil. But you can try the oils to see which you prefer. I think the oils can change the flavour of fried foods. That's why I like the ones I mentioned.

Thank you so much! If you fried it without boiling it first, it will be hard. You definitely should boil it first. If you don't have a pressure cooker, just boil it in a pan until it is cooked. Cool, then fry. You'll love them! They are so good!!

What is the difference re taste and pleasure between pre-boiled and not pre-boiled?

I notice a big difference!! In the restaurants, I don’t think they are boiled at all and they taste slightly dry when fried. If you follow this recipe, you’ll see how nice and crisp the outside is and how soft and moist the inside is. Try it and see😃

I tend to avoid dishes that involve deep frying as I never know what to do with all the left over oil 🤣

I clean the oil by sieving it and then using it for tempering my curries along with some fresh oil (50:50) and it works great! Give it a go!

Tapioca flour is made from cassava or mogo. But only the flour or pearls are called tapioca. I’ve never seen or heard the actual root vegetable being called anything other than cassava, mogo or yucca.😊

Large pieces should be fine once cooled. But this is a new idea for me by adding milk and cardamom 😊
