There was a spot in Lincolnton, NC called Lincoln Seafood that was my favorite fried fish place growing up. I wonder if it still hits. If you happen to be there (which you have no reason to be), let me know! With summer pretty much here, all the parties are heading outside which means we can fry up some fish and not stink up the kitchen! Today I'm doing fried flounder because that's what we had growing up in NC but you can substitute any white fish. And we're also making hush puppies, which I didn't appreciate as a kid but now I do! So get that southern accent ready cause I'm taking you home with me....again!

Flounder:
1-2 lbs Boneless, skinless flounder filets
1 cup House Autry seafood flour mix
1 cup fine cornmeal
Salt to finish
Oil for frying
Hush Puppies:
1 cup cornmeal
1 cup all purpose flour
3 tbsp sugar
1/2 tsp baking soda
1/2 tsp baking powder
2 tsp cajun/creole seasoning
1/4 tsp salt
1/8 tsp black pepper
1/2 cup buttermilk
2 tbsp unsalted butter, melted
1 large egg, beaten
3 tbsp grated sweet onion
Oil for frying
Optional:
Lemon wedges
Hot sauce
Tartar sauce
Seasoned French fries
