Another recommendation is to toast your French Bread to give it that New Orleans crisp before assembling your sandwich. Being a New Orleans Native, the bread is key so it's prob best to get online and order your french bread from one of the bakers from down there. Cest Si Bon. :-)

God girl you make my mouth water every time I see your channel!!!! My husband wants me to make this for him!! Question I never used buttermilk before with my batter does it make taste better I always have used milk!!! But I see how the breading sticks better could it help if I use buttermilk?
@CookingWithCarolyn
@CookingWithCarolyn 10 лет назад
Buttermilk is thicker and I love it in batters. The batter stuck because I let them sit before frying. Give it a try and then use the some of the buttermilk for some cornbread for another meal.

u can freez the breading and use it whenever you're making this again
@CookingWithCarolyn
@CookingWithCarolyn 10 лет назад
You could but it better be labeled so you don't mistake it for something else. Sounds like you cook, but some beginners won't know to label and date that saved product and not use it for something else...at least until they learn about cross contamination then they'll understand like you. Anyway, the measurements I put on the recipe are just enough so there won't be much flour and cornmeal left anyway so there's hardly any waste.

Hi, Carolyn! I love the video. I always go out to buy Po'Boys, especially by the beach! :^) Do you have a video on frying? I have a lot of trouble when it comes to frying. My fried foods always come out oily, burnt, or the oil gets too many burnt crumbs in the oil.. Ruining the rest of the batch. :-( If you do not, I would love if you could make one with tips and tricks!
@YT4Me57
@YT4Me57 10 лет назад
Sounds like you might need a thermometer to check the temperature of the oil before using. Definitely if the food is burning-the oil is much too hot or you are leaving it in there too long. If the food is coming out too oily the oil isn't hot enough and the food is soaking up the oil before it gets a chance to cook. Somewhere in there is 'just right', lol, hence the thermometer. Carolyn also mentioned allowing the food item to rest with the batter/coating on it so it will stick to the meat and not fall off into the oil. Hope that helps.
@CookingWithCarolyn
@CookingWithCarolyn 10 лет назад
Yeah I agree with YT4Me. Go ahead and click the recipe link because I tell how to get your oil hot enough to fry.
