Recipe:
1. Prepare the tomatoes: Boil enough water. Gently score an X on each tomato. Add boiling water to cover all tomatoes and wait for at least 10 mins. Then pour out the water and peel the tomatoes. Cut the tomato into chunks.
2. Mince the green onion and garlic clove.
3. Prepare the tofu: Cut tofu into 1 cm thick slices. Coat each side of the tofu slices with starch.
4. Heat up the wok and add 50 ml oil.
5. Beat the egg. Dip the tofu in egg mixture then fry it with low heat. Flip the each tofu slice and fry it. Place the fried tofu on a plate.
6. Add the minced green onions and garlic to same wok. Stir-fry it until fragrant.
7. Add half spoon of chicken essence, 2 spoons of sugar, 1 spoon of salt, 200ml water and 2 spoons of ketchup.
8. Mix all well. Remember to crush the tomato chunks more.
9. Add the tofu and stir-fry for 5 minutes.
10. Sprinkle chopped green onions and enjoy!

300g tomato

1/2 tbsp chicken essence
2 tbsp sugar
1 tbsp salt
2 tbsp ketchup
