Acini de pepe is best but hard to find these days. Glad to know other pasta is used.

I have always used Acini de Pepe pasta for the Froe Eye Salad. It is a much smaller pasta almost like tapioca.

Yes, that’s the correct pasta and, if you’ve ever actually seen a frogeye, in looks like acini di pepe.

That’s what I use as well. They’re little round pasta balls. They really do look like frog eyes.

Walmart does carry Ditalini. I use it in several soup recipes (mostly Italian or beef stew). YEARS ago, in Georgia, I had an appetizer called Frog Eyes made with Ditalini pasta... It had capers and cream cheese with dried chives in it. I will have to dig that one out of my recipe box and send it to you. HUGS and thank you for another awesome recipe.

I've never heard of this salad but all the recipes I saw online call for Acini de Pepe pasta which are like little balls. My mother makes a similar salad with cottage cheese which I really like. (I think the cottage cheese would look similar to the Acini de Pepe.) When I first saw the title, I thought it would have stuffed Manzanilla olives for the frog eyes lol!

It doesn’t really matter, but true frogeye salad is made quite differently and with acini di pepe pasta. I’m sure yours works just as well. Ingredients are similar.

Hi Mama Sue, This is the Minnesota version of frog eye salad. It is delicious! 1 c. Sugar 2 T. Flour 1/2 tsp. Salt 1 3/4 c. Pineapple Juice 2 eggs, beaten 1 T. Lemon Juice 1 16 oz. Acing de pipe noodles, boiled in 3 qts. water with 2 tsp. Salt. Drain and cool. 3 - 11 oz. Mandarin Oranges, drained 2 - 20 oz. Pineapple Chunks 1 -20 oz. Crushed Pineapple, drained 1 - 9 oz. Cool-whip 1 c. Miniature Marshmallow 1/2 c. Shredded coconut Drain noodles and let cool. Combine sugar, flour and 1/2 tsp. of salt in saucepan. Gradually stir in Pineapple juice and beaten eggs. Cook over moderate heat stirring until thickened. Add lemon juice. Cool to room temp. Add cooked and cooled acini de pipe noodles to egg mixture. Mix lightly but thoroughly. Refrigerate overnight. In the morning, add the rest of ingredients. Mix lightly but thoroughly. Refrigerate until chilled. Can last as long as a week in airtight container.
