Japanese Okosama Kid's Meal Recipes
▼Meatballs
Ingredients:
- about 400g ground pork (1LB)
- 1/2 onion, minced
- 1 tbsp grated ginger
- 3 tbsp potato starch (or cornstarch)
- A pinch of salt and pepper
- 2 tbsp Sweet Sake (Mirin)
- 2 tbsp soy sauce
- 1 tbsp vinegar
- 2 tbsp sugar
- White sesame seeds (for garnish)
Steps:
1. Pan fry the minced half onion until golden brown.
2. In a bowl, mix 400g of ground pork, a pinch of salt and pepper, 3 tbsp of potato starch, 1 tbsp of grated ginger, and the sautéed onions.
3. Knead the mixture until sticky, then shape into meatballs.
4. Cook the meatballs in a pan until fully cooked.
5. Make the sauce by mixing 2 tbsp of Sweet Sake (Mirin), 2 tbsp of soy sauce, 1 tbsp of vinegar, and 2 tbsp of sugar.
6. Coat the cooked meatballs with the sauce and heat until the sauce thickens.
7. Sprinkle white sesame seeds on the meatballs for garnish.
▼Omelette
Ingredients:
- 3 eggs
- 1 tbsp milk
- A pinch of salt and pepper
- Edamame beans
- Corn
- Cheese (optional)
Steps:
1. In a bowl, whisk together 3 eggs, 1 tbsp of milk, and a pinch of salt and pepper.
2. Add edamame and corn to the egg mixture.
3. Pour the mixture into a pan and cook until the omelette is fully set.
4. Optionally, add cheese to enhance the umami flavor.
5. Fold the omelette and remove from the pan.
▼Ketchup Rice
Ingredients:
- 200-300g white rice
- 10g unsalted butter
- 1tsp Worcestershire sauce
- 3tbsp parts tomato ketchup
- Salt and pepper to taste
Steps:
1. Cook 200-300g of white rice and let it cool slightly.
2. In a bowl, mix the rice with unsalted butter, Worcestershire sauce, and tomato ketchup. The best ratio for umami-rich ketchup rice is Unsalted Butter: Worcestershire Sauce: Tomato Ketchup = 1:1:9
3. Add salt and pepper to taste.
4. Shape the rice (I used a canelé mold.)
▼French Fries
Ingredients:
- 1 Potato
- Flour (for coating)
- Oil (for frying)
Steps:
1. Cut the potato into sticks.
2. Coat the potato slices with flour.
3. Heat the oil in a frying pan and fry the potatoes until crispy.
4. Fry them twice at a high temperature for extra crispiness.
5. Remove from oil and drain on a French Fry Tray.
