Ingredients:
4 1/4 cups water (1 liter) room temperature
1.6 kg flour
2 grams fresh yeast (1/2 tsp )
3 tablespoon salt (40 g)
Directions:
Add water, yeast and salt to a stand up mixer with hook attachment. Start mixing and very slowly add the flour. Mix for 25 minutes. Dough should be very soft.
Divide dough in equal parts and create individual dough balls.
Let them rise in the refrigerator for 24 hours.
Before stretching let dough sit at room temperature for an hour.

@@judichristopher4604 hard to choose because each region has its own beauty. Napoli and the town of Vico Equense is where I feel the most connection bring that I was born there. Second is Umbria. Hope to be running tours one day. Un abbraccio 🤗

@@alessandrasfoodislove My family is half Italian (D'Alesso") that is where I have learned to cook... not fancy, just down home goodness. One of our Grandmothers is teaching me the right way to make Limoncello ... I just wished I had the Beautiful Lemons from Italy... I would love to go to the parts of Italy that use more butter than EVOO, and Meat more than Fish.. Maybe one of these day... God willing. Thank you again for all of your videos. Chow

Freeze them as soon as you make the balls. Thaw in the fridge for at least 24 hours.
