1. Get yourself a large skillet! Ideally you want to be cooking everything in one pan so all the flavours get to know each other
2. Lightly oil the pan and add two sausages on med-heat. Keep turning every minute or so until golden, then leave to one side
3. Slice your black pudding and add to the pan, cook for 2 mins on med-high, flip and repeat, then set aside
4. A full English calls for back bacon, but I use both streaky and back. Place your streaky bacon down first, cook till golden and crispy, then add your back bacon in next and do the same
5. Add some chopped button mushrooms, season, add thyme and sauté ~3-4 mins, set aside
6. Add in your vine cherry tomatoes + 1 halved tomato and allow to sear/caramelise, then add your sourdough and toast in the residual fat
7. Meanwhile, add your beans to a sauce pan, season, add thyme and leave to heat
8. For the rosti, peel, grate and rinse your potato till water runs clear, then squeeze out excess water. Add to a bowl with 4tbsp melted butter, 1tbsp corn starch, sea salt, black pepp
9. Mix together, then shape into patties. Cook these in some olive oil and butter on medium-high for 7-10 mins, flipping every few mins and basting till golden and crispy
10. Once done, set aside and crack your eggs into the same pan to fry
11. Plate up and serve with a nice cup of English breakfast tea!
