Very nicely done, and helpful. I was looking exactly for this -- literally a side-by-side comparison between Ardop and VARA HF. Impressive results! And nice touch, with the cat video to "kill time" as we wait for Ardop. :-)
The bottom of the RPI TNC setup document includes info to do this, the RPI Trifecta TNC Bank image actually includes a bunch of this stuff included as toys to play with so you can set up using the methods used here. Essentially serial-over-network / socat is used to create virtual devices for the dosbox software to reach the virtual ttys on the host OS.
