Why on earth is he sending the violet fibre into the white area? at 3:38

That would be the BLUE fiber not violet. If you watch carefully that is the first fiber he's sending through the holding area. The colors look to be only for reference of the coding scheme.

its all going through the SAME OPENING. the color code is just there to show you the order.
