Chinese Noodle Soup

Ingredients
Whole chicken 1
Green onion 14 gm
Ginger 14 gm
Peppercorn 1 tsp
Star Anise 2
Cinnamon 1 stick
Bay leaves 3 pieces
Black pepper 2 tsp
Five spice powder 0.5 tsp
Sugar 28 gm
Red vinegar 1 tbsp
Soy sauce 1 cup
Water 6 cup
Egg noodles 283 gm
Tomato, diced 85 gm
Ketchup 0.5 cup
Chicken stock 4 cups
Salt 0.5 tsp
Corn flour mix with water 1 tsp
Method
Make a broth by adding chicken pieces into hot water and cooking it. Now in a same pan add oil first green onion and ginger, peppercorn, star anise, cinnamon, bay leaves, black pepper, five spice powder, sugar, red vinegar, chicken shred, soy sauce, water, and cook it well. Strain the sauce Cut the breast and thigh chicken pieces. Shred the bone chicken. Set aside. Boil egg noodles take them out. Now in a same wok add a cold oil layer now add tomatoes add ketchup stir well and let it cook now add chicken stock, salt, shredded chicken and sauce. Add corn flour water while stirring. Do the plating add noodle soup and chicken on top. Serve.

Tempura Prawns Chinese Style

Ingredients
Egg Whites 4 large
Flour 1 tbsp
Corn Starch 1 tbsp
Tiger shrimp 7 oz
Water 5 cups
Red vinegar 1 tbsp
White pepper 1 tsp
Salt 1 tsp
Bread crumbs 6 cups
Cooking oil 1.5 cup
Method
Beat 4 egg whites until fluffy. Add 2tbsp flour and 2tbsp/20g starch. 2tsp baking powder. Mix well and set aside
Clean the shrimp with water. Seasoning the shrimp with cooking vinegar, white pepper, and salt. Mix well.
Coat each seasoned shrimp with the egg white batter completely. Coat another layer of bread crumbs. Set aside.
In a cooking pan, bring enough cooking oil to medium to high (the oil temperature should not be higher than this). Add the shrimp and gently stir. Slowly bring the oil temperate to medium to lower in about 5-6 minutes until the shrimps appear golden. remove from the oil and drain. For people who can keep temperature (Note: oil temperature cannot be too high 100-130°F / 40-50°C when adding the shrimps in. slowly bring up the temperature to 100°C-130°C while frying in about 5-6 minutes.)
