I use frozen corn, potatoes, onion, chicken broth, bacon and heavy cream in my corn chowder and everyone loves it! If I have fresh corn on the cob, I will use it when available.

I had a little nibbled hole at our place so I just hand painted the words "Mouse House" around the top of the opening, adding a few painted forget-me-nots and it certainly provided a giggle or two!

Good morning Linda. Willow has such a sweet face. I've never tried corn chowder, that I recall. I love your pink sweater. Such a beautiful garden scape, the natural stone walls make it beautiful. I like to boil ham hocks, using the liquid as part of the stock for my corn chowder. I do use frozen or can whole kernel corn. The amount of potatoes totally depends on how many I am feeding. I would focus on one recipe and tweak it to your taste... some like more onions, more or less potatoes....you do you. I know real cooks would call this sacrilegious....but I add one can of cream of chicken soup to my half and half and butter. Yummmmm

Awake at 2:00 AM? Hmm.... sounds familiar! I love making corn chowder and I usually make chicken corn chowder, which is a nice hearty meal. Also, I usually caramelize onions in any soup that I make, which adds a lot of flavor. Of course I always add bacon to corn chowder because after all ....who doesn't love bacon! I'm sure that we are all happy to see the "green things" poking through the ground as Spring makes her way to our little corner of New Hampshire. Looking forward to seeing your bedroom when you finish with the beautiful bee wallpaper. As usual, Willow is just as cute as can be!! Yes, I grew up watching my grandmother and mother pour boiling water over the potatoes for many recipes - escallop potato casserole etc. I was told it was done to cut prep time. It was a tradition in my family and thought everyone did it. Btw my grandmother was a New Englander born in the mid 1800’s. Yup, I’m long in the tooth😂

I adore watching little bee butts disappearing down my Calla lilies in late winter here - they always have cute little seventies' style "legwarmers" on their hind legs: they collect a LOT of pollen from those long thick stamens! Your corn chowder looks delicious - on one visit to the Boston area, we stopped and had lobster chowder and corn bread at the Jenny Grist Mill restaurant, while watching the squirrels run up and down some lovely old trees....good memories.

Our very chilly “Spring” weather is perfect for corn chowder! I’ve made it many times over the years and always include bacon (salt pork is fine, too, but not crucial), sautéing it in a Dutch oven on the stovetop as you did. I then drain off the excess bacon drippings (reserving some to add back to the pot as needed, and storing the rest in the fridge or freezer for other uses). I sauté the onions in the same pot in the remaining bacon drippings, then add the diced potatoes and my own chicken stock (always in the freezer) just to cover in the pot (more flavorful than water, which is fine for a vegetarian version without the bacon, and sautéing the onions earlier in butter). Once the potatoes are cooked through, I add both canned corn (drained) and creamed corn, salt, pepper and herbs (basil, thyme, chives, etc.) to taste. I finish it with evaporated milk (or cream if I’m feeling very decadent). I don’t need to measure at this point and just use as much of each ingredient as I need or prefer, but my version isn’t very different from yours. Glad you enjoyed your impromptu version! 😊

I use chicken stock in my corn chowder, and use my frozen corn from the previous season always. Yes I cut it off the cobs…. So fabulous. Yours looks delicious as well. Thanks for sharing.

I have done this since the pandemic. I've tried some great recipes and of course some ones that were not so great. I tried new ingredients, spices and have enjoyed the adventure enormously. I keep my favorites and sometimes repeat. I always suggest to them that they try this even if it's just a variation on a meatloaf or a soup.

I have alway made corn chowder. You need to put in cream style corn in your pot. The cream style corn makes it a chowder other wise it is a corn soup. Also adding the cream style makes it thicker and delicious.

My corn chowder potatoes,onion,coked in bacon grease but I remove the bacon and add it back in the end chicken stock thyme bay leaves garlic heavy cream and of course corn but I use corn from our garden that I have frozen where the cob has been scraped,I do thicken it with a little flour or corn starch. But very little add bacon and chives at the end and sometimes I add in Shrimp . The first time I have ever heard of boiling water on potatoes that’s interesting. But being from the South,years ago we had Spring houses,smoke houses but I have NO CLUE what a sugar house is . ??? It has been AGES since I made corn chowder. I loved making it years ago. As I’ve been getting older I haven’t made it because of the sugar aspect of the corn and the cream I often used. I love it with bacon and drippings as well as garnishes. I usually allow myself corn on the cob at least once every summer from a farm stand if possible. This month I’m making mushroom soup (never have done this before) as an interesting endeavor. I truly enjoy trying new recipes since I am the sole critic. It is actually quite fun. 😊

Please, please, please don’t cook with aluminum foil. When heated the aluminum leaches into your food. Alzheimer’s! Use parchment paper instead.

This GRIT(girl raised in the south!) was raised on salt pork. Use it all the time, particularly in any kind of dried beans. Will try your version of corn chowder and use our Kentucky homegrown corn! Love the daffodils they grow wild in Kentucky!

Thanks for the chowder recipe. I think any time corn comes out of a can it tastes tinny., or metallic. Frozen or fresh is so much better. But the recipe seems lovely and I look forward to making it!

I had never had corn chowder before until a couple of years ago when we took a trip to Pigeon Forge Tennessee and ate at a restaurant the locals raved about called The Old Mill. They automatically bring everyone a cup of corn chowder and a basket of breads. I was hooked at first bite. They even have a little Country Store adjacent to the restaurant that sells kits to make the chowder at home including soup bowls and breads. We like country ham with our corn chowder. A great cold weather meal😋

At least for now, I am trying for Thursday or Friday mornings so that I can have my weekends with family and be outdoors. Sunday releases have me inside editing starting Friday night and Saturdays. I will still do some Sundays here and there.

Chowder isn’t something we make in the UK, looks appetising though. With all the extra work you’ve taken on, have you considered getting a gardening team in to clear all the borders to give you a head start. I know you had some work done last year, perhaps it’s time to get some more help.

Sooo much to do outside. Such a huge yard to control. I would definitely hire landscapers or maintenance crew to do the yard and build garden boxes, cleanup for you. That way you can focus on the inside and plant your garden. 👍👍👍👍

I love to see a day with the sky that color of blue it feels magical somehow. 😊 I'm not a fan of salt pork either. I voted for the corn chowder but not sure i will make.it...i love New England clam chowder so i thought I might like it . ..i guess i was thinking of a corn relish anyway you are so fun to watch make anything and you aren't afraid to tackle anything . I really love the shed that color it just pop's... I'm putting my unasked for opinion out there😂. Enjoy your Easter planning. ❤

I stay up and unfortunately I go to bed fairly late. If I go to bed early, I'm up in the middle of the night. I try to get as much sleep as possible, but my body and brain says 5 hours or so.

Linda, Nice adaptation from a collection of recipes. I'm a fan of that approach. I wonder if a little canned pimento (rinsed) would change the flovor too much. My mother used "canned" (from a jar) pimento a lot... but she wasn't a particularly good cook. I received a gourmet gift basket with a jar of pimento for Christmas. They're almost too beautiful to eat.

I think corn chowder is a Southern thing! I'm in Wilmington, NC. I always add shrimp to to mine in the summer, and it is a feast!

I love corn chowder! But I add canned milk, this is how my family makes it. Also I have from time to time made it with corn and fish, surprisingly delicious.

I use a recipe for Corn Chowder from a Blue Willow Inn Bible of Southern Cooking. 5 slices of bacon sauté until crisp and remove from drippings. Sauté 1 large onion in the drippings until soft. Add 2 (10 3/4- ounce) cans chicken broth and 2 cans of water. Add 3 large potatoes, peeled and diced. Cook until potatoes are done. Add 1 can cream-style corn, 2 cups evaporated milk and the bacon, salt and pepper. Looks like you all have a busy Spring and Summer planned. 😊

I see you made corn chowder my grandmothers recipe called for chicken stock and turmeric in her recipe. I also use bacon in mine. I may make this for lunch today.

Hi! My husband is a chef so everything I know about cooking I’ve learned from him. One thing he adds to Corn Chowder is maple syrup. Delicious. He puts it on the menu as Maple Corn Chowder.

Hi Linda, I have been making corn chowder for many years, and taught it in my cooking classes (in Cape Elizabeth adult ed) My favorite is chicken corn chowder and Lobster Corn chowder. I use only one potato because I don't make just the corn. I use it as an added texture and boil it separately. I always use good center cut bacon. I only use salt pork in my fish chowder and crisp it enough to use as croutons in the fish chowder. I generally use Half and half or milk and half and half. I have not tried the boiling water! Oh my goodness. Sometimes I suffer from insomnia and wonder should I keep trying to fall asleep or just get up and start breakfast 🙄 it’s so frustrating. Aww willow 😊 ❤ do you ever try to lay down next to Willow to sleep? I’ve heard our pets can have a calming effect.

Too funny… when you were almost done with the chowder, my thought was, “ I’d definitely add bacon.” We make a crab bisque that everyone loves. I love making soups and chowders. Now making corn chowder is a must. Thanks Linda 🌷

Although it’s not an English dish your Chowder looked yummy. I love Willows head & ears, it’s always a delight to me to see her close up, I even show her to my dog Ria…silly I know!.. isn’t spring a joy Linda, so many lovely things to see in your garden & the mountains behind watching the sun come up,beautiful… Thank you, always a great video to watch…☺️

Your kindred spirits from Georgia would say “vidalia” more like this: vy -DAYL - yuh Lol. Gotta get those long vowel sounds in there. Vidalia, GA is down hear Florida,I’m in north GA (Athens), closer to the mountains. I’ve been to Massachusetts and it’s absolutely gorgeous. I think this southern gal could live there. Except for the winters 😆. Side note: we’re exactly the same age…would you happen to have been born in December as well? We seem to have such similar traits, just windering if it could be attributed to being Sagittarius

This corn chowder looks delicious. I make one every spring and use my loaded baked potatoes recipe just add the corn minus the bacon …it’s so good..such a comfort food. I love seeing the new green coming in and everything popping up. Can’t wait what you do for Easter :)

I'll try this recipe. Not usual for me to use butter, pork fat, and half & half (all 3) in 1 recipe. When I make it I think I'll cut down on the fat. Also, love seeing the 1st bees of the season!

Daffodils and forsythias have been blooming here in East Tennessee a few weeks now and about to start fading. That corn chowder looked delicious. Willow is a beautiful dog. 😊

It is so nice to see plants popping up and spring flowers blooming, along with the bees! Seems the first trees in our neck of the woods to begin blooming are the Willows. I see a lot of green there right now. Cold and snowing here in northwest Pennsylvania, but signs of spring are everywhere. Enjoy your day!
