Thanks Zach and Jen for opening your homestead to us. I am so sorry to hear about your loss. We are thinking of you, Zach’s Mom and the children. I remember seeing your step dad helping with a job, fitting outdoor lights I think. At the time I thought what a great relationship you had. Take care of yourselves and all of us subscribers are sending you lots of love and prayers.

I stuff my peppers then freeze them. They are wonderful.

@@Cindy-lo6zz Turkey and rice peppers 4 med peppers tops, ribs, and seeds removed. 1 pound cooked ground turkey breast I cup cooked brown rice I small onion. Finally chopped 1 peeled garlic, minced 1/2 cup canned black beans rinsed and drained 1/2 cup frozen corn 1/4 cup finally minced flat leaf parsley 1 tsp. Dried oregano Salt and pepper, to taste 2T.grated parmesan cheese Preparation Cut a very thin slice off bottom of each pepper, just enough to help them stand straight and firmly. Set aside. In a large bowl, combine everything except cheese and peppers. Add beans last, mixing in lightly with a fork so they aren't mashed. Pack peppers with mixture mounding any extra at the top. Place stuffed peppers upright in a 9 in square baking dish, 1 cup of water into the dish. Cover the dish with foil and bake it in the center of the oven fir 20 to 25 minutes. 400* oven After 15 to 20 minutes, uncover peppers. Sprinkle cheese on top each pepper. Put in airtight bags in freezer tull ready to fix. Makes dinner fast and i love it.

I dehydrate various peppers and make a pepper blend. It's great for chili, soup, etc. in the winter. :)

You can make your jalapeño poppers & then freeze them on a cookie sheet, then put in a Ziploc bag. Then you just pop them in the oven. Yum.

I only had 2 okra plants come up but have had a few to harvest. I just eat them raw off the plant.😋 Harvested them at about 3-4” long and they have a slightly sweet taste...any longer and they get woody and slimy. Thanks for sharing! Can’t wait for another cooking video, Jen!💗

If you have too many marigolds, feed to your chickens and ducks. They are really good for them and makes beautiful orange yolks. Especially in winter when they aren’t getting much forage.

You can freeze jalapenos whole. Just wash , dry, freeze whole. When you take them out to cook with just cut off top, leave seeds in and chop up to add to foods.

I make a sauce called shirley sauce. It's a recipe that my gram made. And we love it. I have been making it for over 40 years. It's a sweet and sour sauce that is great on chicken and pork. Yum!

You can clean\t a slit in the banana peppers add some salt put a slice of cheddar cheese in it. Bake it til done. Wrap in wax paper. Put in a freezer bag then you will have them for the year. Great with beans and cornbread.

If you’ve not tried roasted okra, it’ll change your life! A little olive oil and salt and pepper. High heat in a cast iron 🤤 Delicious! I like to roast all kinds of veggies on the grill along with the okra too. Egg plant, okra, zucchini, cherry tomatoes. It’s soooo good roasted

You two are really my favorite people. I first saw you on Roots and Refuge getting goats. Nice harvest! I have heard that the noodle beans make great dilly beans. I havent tried it yet, mine haven't cared for the tpee trellis and aren't producing well. I'm drowning in cucumbers too and need to make some bread and butter pickles, everyone else in the family is dill pickle lovers.

I like to grate my zucchini for bread and freeze with 2 cup per bag. And you don’t have to do anything else to them. And then in winter when I have more time and it’s cooler and bake my bread. It is per measured so I can make either 1 loaf or 10 loafs at a time. Keeps 6-9 months beautiful. If you are getting close to the end of their time in freezer. Just make bread and freeze your bread. Yummy

We have places up here in Vermont that makes "Dilly beans" Instead of cucumbers for dill pickles, they use beans. My daughters favorite snack..lol

I never got around to it last summer, but eventually I’m planning to make some refrigerator pickled yard long beans in a half gallon jar just for the novelty. =)

April, Royalty Purple Pod Beans germinated in 10 days and my first harvest in 60 days. Still going strong. Next year for sure

I shredded my zucchini last year and froze it in loaf size portions. When I baked the bread it worked perfectly.

I am happy at all the veggies doing so well for you. I have the Oxhart Tomatoes and I agree they are cute. They are very meaty and taste pretty good too. I have 2 noodle beans growing finally and I am so excited. Thanks for sharing about them. Enjoying all the ways you are using your bounty. I made zucchini bread and froze some😉 .
