Garlic Chilli chicken so delicious, it will get your taste buds crying out for more so be prepared to make more. It's infused with fresh garlic and the spice blends just make this chilli garlic a must. This is BIR style Garlic Chilli Chicken which you can make at home for a fraction of the price.
This is video a COOK ALONG video, no more guess work, just do what I do and when to make this delicious chicken Garlic chilli curry.
Preparation time 10mins (assuming you have base gravy already) - before you start and to make things easier, measure out the ingredients as below.
You will need Base Gravy as this is a BIR style cooking at home curry.

Ingredients to make Garlic Chilli Chicken
300-400ml base gravy
2-3 tbsp oil
½ chicken breast - cut into 8 cubes just like the BIR style portions
Salt to taste
½ Onion diced
1 tsp Tomato Puree Paste
1 Chefs Spoon Fresh Garlic Paste (Do not use ready made paste for this, make your own garlic paste)
1 tsp Red Chilli Flakes
¼ tsp Turmeric Powder
1½ tsp Mix Curry Powder
2 tsp Chilli Powder (to taste)
½ tsp of Gram Masala
2-3 Fresh Green Chillies
½ tsp Fenugreek/Methi Leaves
Handful of Fresh Coriander
1-2 Fresh Tomato Piece
Cooking Instruction To Make Garlic Chilli Chicken
Step 1
Heat oil in pan and leave on medium heat, add red chilies flakes and cook for 20-30secs and then add Garlic paste and cook for 1min and the add chicken, cook chicken for couple minutes and then add diced onion and salt to taste.
Step 2
Add some base gravy to help flavour the chicken while its cooking, ¼ tsp of turmeric powder, give it a good mix. Let cook for about a minute then add tomato puree paste, mix well, let it cook for couple mins while stirring occasionally. After couple minutes add methi leaves and mix well. If the base dries up to much feel free to add some base gravy
Step 3
Once the chicken is almost cooked add in the spices, 1½ tsp mix curry power, 2 tsp (to taste) chilli powder, green chillies and mix well. As always this part is the most important - make sure you cook the spices well as per video guide. Use tiny bit of base gravy at a time and cook those spices well for 3-4mins, add some coriander to, stir occasionally as you don't want to burn the spices.
Step 4
Add about 300ml of base gravy, give it good mix, add ¼ gram masala, some coriander, tomato and let it cook to the required consistency, stir occasionally. Once the oil rises to the top the curry will be ready, also check to ensure the chicken is cooked as per video guide. If you want your Garlic Chilli chicken to be more saucy then add more base gravy until It reaches your desired consistency.

Excellent looking dish mate and calm and collective cooking skills, when i make mine i heat up a cast iron kadai add a little ghee some more garlic and a pinch of methi then i tip the cooked curry into the kadai and serve it on a wooden trivet 👏👏👍👍

Just getting back into learning these types of cooking how do you make your garlic pastes and green chilli pastes i wasnt sure if you had fone a video for them Thanks love the videos you have all my favourite dishes

Red_Snappa Thanks so much, definitely a delicious dish! Regards to the chef spoon, use one chefs spoon of garlic paste. Garlic paste is made from one medium sized garlic head, bit of water, 1/2 tsp of oil and then blend into paste. Hope this helps and enjoy!

Great recipe and your base and mix powder are just the best, honestly 👌 Any tips for upscaling in quantity? Tried adding more ingredients but not really working. Wanted to freeze larger batches for parties etc, thanks 😊

Thank you so much and really pleased you are enjoying the recipes. Generally speaking if I wanted to make 2 portions carry I would x 1.5 spices and ingredients. Larger batches all depends quantity you aiming to make, if you looking double the base gravy then I would suggest x 2 on all ingredients or make two pots of it, to be on the safer side. As you cook more you will more experience which will give the confidence and knowledge to cook in big batches. For a restaurant size 4 curry portion, I would x2.5 on ingredients. Maybe start there mate and see how you get on. Appreciate you and thank you again 🙌🙌🙌

Hey so sorry for the really late reply, Tbh I didn't see this until now, here is the recipe to make using 1kg chicken, from scratch without base gravy. Thanks again and enjoy Ingredients to make Garlic Chilli Chicken 1-2 bayleaf, 2-3 cardamon, Cloves and cinnamon stock 6 tbsp oil 1kg chicken breast - cut into 8 cubes Salt to taste (1.5 tsp) 2 medium Onion diced 6 tbsp Tomato Puree Paste (or 2 fresh tomato added once onions is soft) 5-6 tbsp Fresh Garlic Paste (Do not use ready made paste for this, make your own garlic paste) 2 tsp ginger paste 1.5 tsp Red Chilli Flakes (add more if you want) 1/5 tsp Turmeric Powder 2 tbsp Mix Curry Powder 3 tsp Chilli Powder (to taste) 1.5 tsp of Gram Masala 6-8 Fresh Green Chillies 1.5 tsp Fenugreek/Methi Leaves Handful of Fresh Coriander 1 tomato cut into quarters
