I have a master's degree in nutritional sciences in Italy and I have to say that these kind of topics can be tricky, difficult to understand and even boring if they aren't well explained. Seriously, one of the best (if not the best) metabolism videos I’ve watched! I’m a Registered Dietitian working in the clinical setting and need a refresher on these pathways occasionally. This is a great reference!

Am I right in thinking that acid is only produced in the stomach if protein is eaten. If this is the case can the salivary amylase continue to work in the stomach? This has been bugging me for 50 plus years. Have you heard of the Hay diet, also called food combining? Thank you for such clarity in your presentations.

Dr. I am sorry but as I think salivary amylase can not act on 1,6 bond alpha bond. the enzyme that act on that bond is isomaltase enzymes.

I just wanted to say that lactose has nothing to do with cheese cause cheese is already denatured. I’m lactose intolerant and I can’t drink milk but have no problem with cheese 😂
