Spaghetti Carbonara is thought to originate in the Lazio region of Italy, first made for the carbonari (charcoal workers) and is an authentic recipe, now popular the world over. Perhaps one of the easiest and quickest Italian pasta recipes, a Spaghetti Carbonara can be rustled up at home for a tasty week night supper.
In Genaro’s authentic recipe, he uses guanchiale (pig cheek) rather than the pancetta that we might use at home, however pancetta is a perfectly acceptable substitute if you don’t have a good Italian deli near to you.
Although British versions of this dish often include cream, Gennaro’s classic recipe uses just seasoned pasta water, fresh egg yolks and pecorino cheese to create that delicious, creamy texture that you will know and love.
Gennaro has fond memories of eating Carbonara in the backstreet trattorie of Italy’s capital city, Rome. With so much to see and do in the Eternal City, including the Vatican, Colosseum, Spanish Steps and the Roman Forum, Rome makes a perfect destination for a city break, not to mention the ideal introduction to Italy for first time visitors.

Ingredients
4 x servings
1 x tablespoons extra virgin olive oil
200g piece Guanciale (pork cheek), roughly chopped into small strips
4 x large free-range egg yolks
75g grated pecorino & extra for sprinkling
Salt & freshly ground black pepper
400g spaghetti
Method
Bring a large saucepan of salted water to the boil and cook the spaghetti until “al dente.”
Heat the extra virgin olive oil in a large frying pan, add the guanciale and on a medium heat stir fry until crispy.
In a small bowl beat egg yolks with pecorino, some salt & pepper. Set aside.
Drain the spaghetti, reserving some of the pasta water, add the spaghetti to the pan of guanciale, with a little of the pasta water and mix well. Remove pan from the heat, stir in the egg mixture, adding more cooking water if necessary. Serve immediately with some grated pecorino and freshly ground black pepper.

I just made my very first carbonara and it was using this video recipe. I must say that I am a Lithuanian who has never made carbonara before and woke up today and decided that today is the day. My stepfather was raised in Naples and came to the US when he was still little. My mothers Puerto Rican and so many mornings made me some delicious carbonara. It makes you feel calm and collected. It’s tranquil and maaaaaan this brings back memories

Dude Italian dishes have 3 ingredients and they’re the most delicious thing you’ve ever had. It’s insane. I had just a platter of meat and cheese in Florence. Best food I’ve had in my entire life. What I get from it is that 1. It requires a skilled chef 2. All the ingredients have to be incredibly fresh (the cured meats on my favourite dish of all time were hanging from the restaurant ceiling to be cut).

Maybe it depends on what kind of ingredients you used. I mean the pecorino or the guanciale you bought could be too salty.. I suggest you to try again changing brand or putting less salt in the water.

If you can still find it, there was a UK series in the early 2000s with Gennaro and Antonio Carluccio entitled "Two Greedy Italians". Really good.

Gennaro is what I call a true Cook. The man is a marvel. After nearly 30 years of professional cooking you learn something from him everyday. Didn't do a lot of Italian cooking until three trips to Italy and now I do a lot at home. Grazie e mille.

for years my wife was unhappy, bcs i didnt make carbonara for her. i was under the impression carbonara isnt good. i really didnt like to eat it and so i didnt cook it. then, 4 or 5 years ago i stumbled over this video at 3am and got hungry instantly. so i copied the recipe and tried it a few days later. it was amazing. this recipe is now one of my core-recîpes. thank you Gennaro!

I’ve tried this recipe (with the exception of cheese as i used local cheese and pecorino is priced as gold) and it was OH SO AWESOME! Now I’ve stocked pasta at home and would certainly cook real carbonara whenever my tummy demands for it lol

One of the oldest Carbonara recipes even includes Swiss Cheese, not Pecorino. But … Pecorino is one of the cheaper Italian cheese … e.g. compared to parmesan … hence I usually grab pecorino … definitely not weighed in gold …

I saw chef stefano vid... It is good but he made a mistake and as a result slightly scrambled the egg. He should have added the pasta water before the egg mixture to prevent this. Gennaro wins for his silky smooth texture in my book

I am Italian, from Rome, I was born in 1949, I ate my first spaghetti carbonara around 1958, my grandma made it for me (she was born in 1896, also in Rome). Everything Gennaro says is true, but my grandma added melted butter and pinch of sugar into the egg and pecorino "sauce" just before she would put the "Sauce" into the pan with pasta.

There are some modifications. In some places they cook the guanciale on black pepper. Some usa pancetta.
