I've tasted a lot of different cheesecakes to date. And this recipe
maybe creates the most fluffy results. Keep in mind: This is not the
typical american cheesecake (which is also fine). You need curd and curd is maybe not available in your home country.

SHORT PASTRY:
» 1.25 cups (150 g) cake flour
» 0.5 cup (100 g) butter, cold
» 1/3 cup (50 g) powdered sugar
» 1 tsp vanilla flavored sugar
» lemon peel
» 2 tbsp ice/cold water
» 1 pinch of salter
CHEESE CREAM:
» 1 cup (250 ml) milk (2/5 + 3/5)
» 2 packs vanilla custard/pudding
» 4 egg yolk
» 8 egg white
» 1 tbsp vanilla flavored sugar
» 2/3 cup 180 g sugar
» 3/4 cup 200 g whiping cream
» 2.5 cups 500 g curd
» lemon peel
FRUITS AND ICING:
» 400 g sliced peaches, canned
» 1 cup (250 ml) peach juice
» cake glaze powder
» mandarins, canned
TIPS FOR PREPARATION:
» Short pastry: work fast and cool the pastry for at least 30 minutes
» Cut cake into slices
» there‘s no real substitute for curd but some people substitute it with 50 % cheese cream and 50 % yogurt

» baking frame (12 x 10 inch)(30 x 25 cm)
» preheat oven
» 320°F / 160 °C
» 20 minutes (short pastry)
» then 50 minutes (pastry+ cream)
