I have received a bunch of comments in my recent videos about removing the baffle plate from my Old Country Brazos Smoker. Everyone was talking about how I should extend the stack as well for better airflow. My biggest problem with this is that my smoker is located under a canopy, which prevents me from making any permanent modifications to the stack. Therefore, I found a way to extend the stack where I can remove the extension when I am not using the smoker, which makes storage a breeze. Also, this takes minimal effort, doesn't require tools and the results will hopefully make this smoker perform better than ever!

It’s all about applying the same principles of larger more well built offsets to get better performance. Last year I did a few videos on this; stack extension and then the baffle removal with a few briskets cooks and a biscuit test. I think you’re gonna like it. I’m really interested to see what Jeremy thinks too.

i have a old country smoker I rarely use. I've had it for 3yrs and cooked on it 3 times. I'm glad I get to see this modification as I observed a very hot spot close to the shield. I'm going to remove the heat shield and get ready for better cooking. I need to know what size of extension on chimney and how long it should be. I'm getting ready to use in a couple weeks I'm sure this will help me do better. ""THANK YOU!!!

Glad I could help! The piece I picked up was just a standard extension at home depot. I think it's about 30 inches. About double the size of the stack.

Will these be same measurements for the old country pecos? And Can you tell me the exact extension size, and the name and size of the adapter, I don't want to cut anything as well. And were to buy them from. Good job 👌🏾👌🏾

Glad you enjoyed it! I put all of the links for what I purchased in the description. Got them all from Lowes. I believe the diameter of the pecos smoker stack is an inch less than the brazos, so you'll just need to get a size lower. Lowes should have all of that stuff in stock.

Glad you enjoyed it! I did see his video and didn't understand why he didn't just pull it out. Maybe his had more welds or something. I will say, removing it has been a huge help in managing temps.

I live in central Texas, so we're definitely not used the cold and snow. But I did run mine this weekend when it was 19°. I had to babysit it a lot more often and had to run more wood. My cook should have taken about 4-5 hours and ended up taking me about 14. It did a good job. I had to know what would happen in those temps. But unless it's an emergency, I probably won't do that crap again. Lol.

Ugh…you guys aren’t supposed to go through the misery of those temps! I did a cook last year when it was around 30, but windy as hell. Had the same thing happen and it was only a 12 pound brisket.

In that situation, I would smoke and then when I wrap I would move it to my oven to finish.

@@barrygolden9823 Argh, alright dude, you totally busted me. By like hour five hundred and fifty two I did wrap and finish that shit off in the oven. Lol. Nah, just the last couple hours. It was like 4 in the freaking morning. I also didn't mention that everything stalled at like 162° for like 4 hours. Either way, I did it! It was a life experience, and now, I'm good. No more need to ever do that shiat again!

@@barrygolden9823 ​ My problem is my ovens are old and not completely accurate when it comes to temp. I could use my warming trays but for whatever reason, I just decide to brave the elements.

Nice. Does the smoker piece of the unit get hot enough to convection cook a steak or burgers? I.e. for 25 to 450°? Without having Kohl’s in the smoker part just using the firebox.

From what I have tried, yes you can use it as a grill but I have a bit of trouble getting it above 425ish without the flames going in the smoke chamber. I actually made a video about that as well so be sure to check it out! I would never use it for steaks as I don’t think you can get a good sear, but I love doing burgers on it.

Could you do another 90° to get the stack out from under your canopy? I'm guess I'm not sure if the benefit from the stack extension comes from the length or the height.

That would affect the draw of the stack. I just want it to be straight up and out. If it were a bigger smoker, maybe. But on this one, a small gust of wind can screw with the fire. Wouldn't want to add to that LOL

I wonder how adding an elbow to direct the smoke away from the pergola would affect the airflow. Maybe then make the stack taller to compensate? Then you can keep the pit where you have it. Just a thought. I’m not a Hvac guy.

You know what's funny is I keep visualize that when I look at the smoker and trying to figure out if it would work. I would say it would affect it negatively but I'm not sure. I dont think I've ever seen a smoker with that, but I may try it.

I have been wondering the same thing. I'd like to get one of these smokers but I will have to place it kinda close to the over-hang of my roof. I would like to extend the stack at a 45 or less so I don't dirty up the house. I suspect the rising of the heated air will pull it up through the stack but it is just a guess.

Hey man so I'm curious since you have done all the mods have you been able to tell a difference In your cooks?? Temp control, hot spots, etc??? Really considering doing the mods myself.

Absolutely. I've mentioned it in some other videos following this one, but the temps are definitely more even. Still have some differences between the front and the back, but I stopped burning stuff right in the middle and the area closest to the firebox is definitely the hottest now, which is what I wanted. If you're gonna do the bare minimum, take that stupid baffle plate out. It is useless.

@@FattysFeasts ok yes so I took the baffle plate out. The bottom of my briskets were getting crispy for sure I couldn't get that slice through that I wanted. I havent smoked anything since I did that but plan on it tomorrow. What about your fire box? Did you add anything to lift the fire off the bottom to help with air flow to the fire??

Don't justify what you are doing just because someone else did it, this content comes free of cost and just happens to be what I'm interested in right know. I bent my baffle up on. DLX and was comfortable enough to cook a $90 brisket after doing it but I think I'm going to remove and do the stack ext. I want mine to be as short as possible because I don't want too much convection, just enough to keep the temperature pretty even across the pit

Thanks for the kind words. People sometimes get annoyed by seeing duplicate content, which I don't understand since I like to see multiple ways of doing things, but it is what it is I guess! I did the bend up in another video and while it definitely improved the temps, there was still a massive hot spot farther in than I wanted. Hopefully these new modifications work. We will see if I have to cut the stack back a bit.

When extending the chimney does it have to be on the inside or could you slip it over the outside? I just came across a cheap rusted smoker for free but the damper has a part thats welded on the inside and dont have the means to get that peice out

I have a question 🤔🤔🤔🤔I have a 16 inc thick plastic yard blower adapter that connects to the yard blower to pick up leaves, it actually sits inside my old country pecos smoke stack, do you think it's possible that I can use that as a stack extension? Just trying to use what I have 👌🏾please let me know your opinion on this matter.

What's the diameter? It may work. It won't be as long as the one I have on here, but at least it can add some draw. My only concern would be the plastic melting or off-gassing, especially if you're using it on a cook for 12-16 hours. Wouldn't want any of that somehow getting on your food.

@@FattysFeasts extension is 17 and 3\8 in length making the smoke stack a total of 36 inches in height and a diameter of 6 and a half inches, the plastic is a very hard firm plastic, what do you think 🤔

@@ignoranceisnotatrend4669 You can try it and just keep an eye on it to make sure you don't get it to a temp where it's melting. I just try to shy away from plastics in cooking and the metal for the extension isn't that much. But I also understand your desire to use stuff you already have! Let me know how it works out!

That adapter you used is galvanized, that`s why it cost more, I thought galvanized was a no no on all cooking, it`s toxic, I don`t know if it matters on a stack, but as oils run down, they will carry galvanize I think, I would buy plain steel just to be sure., just a thought.

Good catch. I don't think it gets hot enough to be worried about the off gassing, plus I painted it. If it were bubbling up, then I would be a bit concerned!

Instead of a "water pan" I fill the bottom of my cooking chamber with water during the smoke. Would like to know your thoughts on this.

I honestly have never tried it, but I would be curious to. I would say it depends on where your grease drain is. With mine being on the stack side, I would rather have a pan near the fire box. But if I got a ball valve for my drain, I would definitely try it out! In your experience, does that allow for easier cleanup afterwards?

I have the same old country smoker as in your video. I did install a ball valve on the drain which allows me to clean up in about 20 minutes. Just put a 5 gallon bucket under it and start spraying. Thanks for your input and keep up the great videos.

Depending on what I'm cooking, I like to fill the pan Apple juice or Apple Cider. Really changes the game! Especially with ribs!

My old smoker didn't have deflector and I would have to rotate slabs of ribs so the ones closest to the firebox wouldn't over cook or burn. I was thinking about getting a pecos

My pecos damper has like a 9/16 bolt welded to the inside of the smoke stack so you can’t remove the damper. I still feel like your mod will be easiest to apply still though. I did paint inside with that black paint. This weekend gonna trim it.

@@FattysFeasts it wasn’t too bad with a grinder. There’s maybe a half of a business card of open space with adapter + stove pipe. Easily filled with foil. Gonna test sometime this week. I still feel like this is easier than doing a hose clamp on outside of smoke stack. Love this pecos.

How do you regulate air flow from the stack when you add the extension connector?

I actually never screw with the damper on the stack. I have always used the damper on the firebox door to regulate my air flow. That 5 to 6 connector is galvanized..aint that bad for pit?

Galvanized metal, when heated to the point of off-gassing, is toxic. However, in this case, we aren't getting to the point it would off gas. First, it's at the stack, which will be nowhere near as hot to cause concern. Also, note I painted it. If it were to offgas, we would see bubbling. Never saw that.

@@FattysFeasts yep I know I can learn a lot from your teaching style. I have the pecos. I don’t if your familiar with the smoke stack but it’s different from the Brazos as far as the lid/vent for the smoke stack. I think I may have to remove it to get the connector piece to go in because the lid is in the way even when all the way open. I wasn’t sure if you were familiar with this.

@@cretestlloyd4681 Oh yes I understand now. Definitely let me know how it works out! Obviously with my extension I can't use the damper either, but I've found with the old country smokers, if you use it to control temps you just end up killing the fire since the draw isn't that great to begin with.

I know this is old and you have another smoker now but I think you would gain a little more grate space if you removed the baffle off the grate.

I actually did remove it. Not that I would put anything there since it is the hottest spot now, but even with that plate still on the grate, it was making the hot spot more towards the middle of the smoker.

should cut it til the whole thing is 36 in! trust me, the taller the stack without the collector, the hot spot will be by the stack.

Interesting point with that 5-6” adapter. My tests were w/ a 16” and 22” addition to the stock stack w/ no steady back pressure. Too high and yes, that can happen.

The only problem with your idea is when you heat galvanized metal hot enough it give off a very harmful smoke

This is true, however, for this use, it's not a problem. My temps aren't going high enough for it to off gas. Plus, I coated the thing in paint. So, if it were off gassing, I would see some bubbling at least.

Well unfortunately, some people who are new to BBQ cant afford / shouldn't buy a "better" smoker 🙄

That’s why people post stuff so we all learn barbecuing. Never stops learning. It’s like anything in the world doesn’t matter if you’ve been a pit master for 200 years or 10 days we all learn continuously that’s why they call it a BBQ community and I get my temperatures even from front to back.

Also glad someone shares this same line of thinking with me...I learn from so many different creators on here that aren't necessarily experts, but have cool ways of doing things. Some people on here are so offended that people have channels who don't own a line of BBQ restaurants. Or even worse, if you're not from Texas and cooking briskets. It's ridiculous.

I just drilled 1/2 inch holes in mine. Two rows of four and works incredible. I can run to 225 or250 all day long
