In this video, I restore a unique, old rusty sausage stuffer machine crafted by a skilled artisan in Poland many years ago. This machine, with its rich history and unique design, is a fascinating restoration project.
More about the restoration process: It was challenging due to the extreme stage of decay that this machine went through, but it was gratifying in the end! The sausages were delicious and easy to make. I learned a lot about sausage stuffer machines and Polish sausages, specifically about Kielbasa sausages, how they are made, and how many varieties exist.
I was motivated to see if I could make it work again, so I put a lot of soul and effort into this restoration project. When I saw the machine, I was shocked at how bad it looked, so my heart roared that I must rescue it from further decay.
I would like you to watch this video to gain a deeper understanding of this antique sausage stuffer and Kielbasa. This restoration project is not just about reviving a machine, but also about learning and appreciating the craftsmanship behind it.
More about the sausage stuffer: The machine was bought in Poland, so here it was, too, made by a local with a massive talent for building machines from scratch. His work was terrific, but it seems he was building it in a hurry due to many imperfections. This machine was definitely repaired a few times. It is the most visible on the most significant gear wheel, which was welded multiple times.
I tried to clean up the prominent imperfections and repair and fix what was damaged, and I succeeded once again. I preserved the authenticity with care, offering the piece a new life but still keeping the antique feeling visible.

Beautiful restoration job. That sausage stuffer looks much better and it works like a charm too. By removing all the rust and dirt you have it safe to use again as well. Excellent work.

Maybe. The problem I had with a grinder was that animal grease and oil dissolved the oil stain in the wood and it leached out and smeared.. Next one I’m baking paraffin into it like a cutting board.

If you are making Brass Handles, suggest, you should give it a rough finish instead of smooth finish. This will help in getting grip while operating handle, otherwise, slight sweating or moist hands and grip will get lost.

Kin in norther Wisconsin from all over Europe, still did fall pig killing and used every bit. The best kielbasa (called ‘summer sausage’ for some reason), blood sausage, head cheese, all delicious. Salted cured hams hung overhead in the dining area.

There are a lot of different designs of hand crafted sausage stuffers. These designs varied with the available materials from crude to complex. I have one that uses a screw like a grape press. It is easy to use and the sausages come out great. Every town had "a guy" who made these and other butchering related tools.

Ash is a good choice, very dense, will not easily stain or absorb, and I would have left the natural color.

Greasy meat can let ugly stains on plain wood, so the stain may help a little with that.

Kind of horrifying to reflect that most or all of that gunk was on this unit, the last time it made sausage. Those interior welds around the output nozzle look like bacteria traps, too.

15:07 на "сухую" никогда не нарезайте резьбу, в мягком металле. Метчик может застрять и поломаться, будет лишняя работа. Добавляйте капельку масла и используйте два метчика, для черновой и чистовой нарезки.

One small suggestion - Please wear gloves while doing such restoration. It is just a precaution against some injury while handling sharp rusted parts.

16:56 у меня всё же подозрение, что шестерни стояли изначально не так, как надо. Маленькую с большой надо поменять местами, тогда ручку можно будет вращать в правильную сторону.

Why did you turn the brass handle on your lathe and then drill and tap the hole on your drill press? I would have drilled and tapped it while it was in the lathe.

14:53 заготовка плохо закреплена, сверло "гуляет" и может сломаться, если заготовка сместится. Прочнее закрепляйте заготовку и охлаждайте сверло.

I am wondering if you could have turned those ugly welding blobs off the inside of the gear by using your metal lathe?

The gear had a significant crack, which posed a risk of further weakening or damaging the wheel if I continued machining it on the lathe. I had to balance between thorough restoration and preserving the piece's integrity.

NEVER put petroleum great grease on food related products. Always use silicone grease. FYI

Можно, но на один болт уходит около 2,5 часов. Я знаю, потому что мне пришлось сделать 12 для резака Chaff, который я недавно восстановил. В этот раз я предпочел купить их, потому что немного опоздал с графиком из-за более крупного проекта, над которым я работал параллельно. Будьте здоровы

There is absolutely no reason for grease to be put on those gears. They are open. They will not be spinning fast. So the most they need is oil when using. STOP putting grease on everything. Grease holds on to dirt which will cause more damage and will look horrible. Only if those gears were enclosed completely never to be seen again should you use grease. Since these gears are open, use oil. A food safe oil. Even vegetable oil. BUT NOT GREASE!

What you are doing still isn't restoration in the conservative sense - pun intended - but more repair, but you are more conscientious with preserving the substance of the things you restore than most "restorators" on youtube. Please keep trying to be a conservator: Don't fix or replace anything that doesn't absolutely need it and don't alter or improve what the original constructors left imperfect, like casting marks and toolmarks. They are part of the provenance of the piece and should absolutely be left alone. Always keep in mind, the goal of restoration isn't pretty, the goal is authentic.

Ужас а не реставрация, прежде чем реставрировать нужно как минимум узнать устройство и принципы работы... И да, на поршень нужно устанавливать уплотнительное кольцо...

Mineral oil for human consumption doesn't seem to be a wise choice. I would say any kind of consumption oil like olive oil or sunflower oil

Mineral oil is the oil we use on all of our Meatcuting equipment. It’s all we have ever used in 20yrs.

Am I the only one who thinks he did a crappy job? He should have fixed all the ugly welds and cast marks. No smooth finish whatsoever. Just my 2 cents.

@@rustyshadesrestoration I partially agree. You said it has been fixed numerous times and the previous owners didn’t do a very good job. Those welds are not there from the start and should have been fixed better. This was your chance to do exactly that.

And I did exactly that :) I corrected those nasty things as much as the pieces allowed me and preserved the piece's history and character; my goal is not to make things newer than they were or flex over other people's work. I'm not that kind of guy! More than that, it works great, and it made sausages again, and they were delicious! Mniam!
