Already 3rd year in Uni. Will graduate soon. Restaurant closes on Mondays and Tuesdays so they can attend classes in person. Otherwise they study on-line after work.

I don't understand why he cut it and then put it back on the pan. By cutting it, the steak loses all its juices and putting it back on the pan will make it dry and rubbery. After you cut it, you shouldn't be cooking it anymore.
@@purplecrayon7281 I noticed that, and totally agreed with you. But perhaps they have their ways, I’m sure they have experienced many times and decided to stay with that method. Vietnamese dish as I mentioned, they sliced the steak to a larger than the desired dice size, then pan fried so they’ll shrink to the bite size, and only cooked once, good with rice and or noodles. Yum.
@@purplecrayon7281 maybe its just harder for them to control the rareness of the steak while doing all the other stuff. And steaks/beef with rice usually doesn't need the tenderness or juices that steak dishes need.
The other videos say and show that Honoka Ikeda is the granddaughter, not grandson. Honoka is the owner of the shop. She asked her Japan-born, Taiwanese childhood friend, Xu Weijuan (Zhenzhen), to work with her in reviving the restaurant. The girl in the yellow who is profiled in the video appears to be Zhenzhen, who develops the Chinese menu items. It should be noted that the description says that "...Mr. Ikeda and Xu Weijuan live and work together..." I don't think MR. Ikeda and Xu Weijuan are living together. That might bring up a cultural issue....
Thanks for the comment. This video is the first time the girls appeared on RU-vid or other social networking sites, so things may have changed. Initially, Ikeda-san said she could not perform, so only Xu Weijuan (Zhenzhen) is in the video.
