As a person with a sensitivity (I get massive migraines) and a son who will have an anaphylactic response to gluten, I SO appreciate how careful you were. I stumbled upon this video and it warmed my heart. You hit the nail on the head, we typically don't get to experience these amazing pastries. Sometimes I think maybe the headache will be worth the taste, when I see choux buns or amazing puff pastry desserts. Ultimately I know it's not, but to have a person as aware and present as you for a neighbor what a blessing. Thank you.

Thank you. I think it’s hard for some to put themselves in another person’s shoes & many suffer in silence but little by little, society is becoming aware of the effects of our food systems on the individual.
