Hi Fatima, I just tried making the brinjal pickle, I doubled the recipe, but I guess I ended up adding too much vinegar 🤦♀️ Have already bottled these up. You think the vinegary taste would sort of settle down a bit if I use it after maybe a month or so???
In any recipe you can substitute vinegar with dry white wine and lemon juice, but be aware that the final result will have a bit different taste (more delicate, less acid).
