Kadiyo Bodiyo (Kadio Bodio/Kadi Bodi/Khaje) are a lovely, bright-looking snack that are usually seen in Goa at all our fairs and church feast celebrations. The name refers to ‘sticks’ in Konkani. These bright orange crisp sticks made from gram flour (besan) coated in sweet jaggery are a favourite among many! I tried making them at home and they are an absolute WOW! Obviously, they taste super-fresh, plus, they are not as sweet (no added sugar; it is possible the commercial kadi-bodi have some refined sugar for increased sweetness). You can choose to avoid the colour altogether, no problem at all, since it is only for the aesthetic. The fresh ginger juice gives your throat that warmth that ‘Kadi-Bodi’ is known for! Try this and store it to satisfy your snack/sweet cravings 😋
Mog Asum ❤️ Let There Be Love
Ingredients:
(1 US Cup = 240ml)
1 Cup (150 g) Besan (Gram flour)
1/4 teaspoon Salt
1/4 teaspoon Baking soda
1/8 Cup Oil
1/8 Cup Water
For the Jaggery coating:-
1 Cup (150g) Sugarcane jaggery
1 Tablespoon Water
A little bit of Orange food colour (optional)
1/8 Cup Fresh Ginger juice (from 3-inch ginger piece)
1 Tablespoon toasted Sesame seeds
When the jaggery syrup boils and froths, turn off the heat, add the toasted Sesame and then the deep fried sticks. Keep mixing and coating the sticks till the syrup thickens and starts to look less ‘glossy’. Transfer to a baking sheet/butter paper. Separte the stick when still warm and soft; then let them rest to firm up for 30 minutes. Store in an airtight container!
