Goan Neuris | Neureos | Karanji | Christmas Sweets

It's beginning to look a lot like Christmas 🤭
Last year, I was asked to demonstrate my recipe for Neuris (Neureos/Karanji) and I promised I'd put it up this year. So, here it is! These Goan Neuris are crisp, housing a delicately flavoured stuffing, and are absolutely yum :)
Your time means a lot- so, we hope your moments are enjoyed along with the melody that goes with the recipe🎶

Ingredients:
For the Filling/Stuffing:
1/4 Cup White Sesame seeds
1 Tablespoon Vanaspati/Ghee
1 Cup Fine Semolina (Rava)
2 Cups fresh, grated Coconut
1/4 teaspoon Cardamom powder
1/4 teaspoon Salt
3/4 Cup Powdered Sugar (can be altered as preferred)
1/4 Cup chopped Raisins/Sultanas
1/4 Cup Tutti Frutti (optional)
Chopped Nuts can also be added
For the Covering (Pastry):
2 Cups & 2 Tablespoons or 250 grams All-purpose flour (Maida)
1/4 teaspoon Salt
2 Tablespoons Vanaspati/Ghee
3/4 Cup Milk
Flour for dusting
Oil for deep-frying
Yield: 40-45 Neuris (Re-using the trimmed excess flour)
Tips:
•Roast the Semolina and Coconut well. The sweetness of the filling can be altered depending on preference. Add chopped nuts too.
•While making the pastry covering, be sure to rub the flour well with the melted Vanaspati/Ghee; do it for a few minutes to make sure no small, solid lumps are formed. Add room temperature Milk (as needed) to form a soft, smooth dough. Knead it well, before and after resting it.
•Seal the Neureos properly. Apply water along the periphery with a cotton bud, and press well. Be sure to not trim away too much; leave the border with sufficient width. Design with patterns & get creative :)
•While frying, make sure the Oil is not too hot. Keep the flame on minimum (use the stove's smaller burner), fry each side for approximately 2 minutes, then increase the flame to medium. Keep flipping till they attain a golden brown colour. Turn off the heat for a couple of minutes before the next batch. Drain on kitchen towels.
This way, (1) the neuris don't get many large blisters, and (2) they stay crisp for many weeks.
•Once cooled, store in airtight containers. The longest I have kept Neuris are for about 2-3 weeks; they are finished by then🙂

So meticulous and artistic! I also learned something new; the Goan custom of starting out making Kuswar/Consoada by making a little cross 😊 I have a strong feeling that this recipe produces that light, delicate, crisp crust we Goans associate with Neurio. Thank you Florency!

Thank you dear. You are really amazing. I remember my mum and aunt doing this all at Christmas. We kids used to be together enjoying preparing all this. Christmas used to be way different then and now. All this used to be made with wood outside. Specially Dos, Bebinca and Dodol all used to take hours to make as it was in large quantities. You made it look so simple and gave tips also to get all your recipes right. God bless

Hi Florency! Planning on making your lovely recipe d day after! Can u please clear one query of mind! Incase I use d store bought packed desecrated coconut how to go about using it? Same way as u did with d fresh coconut or do I need to do anything different? And will it change d texture of d original filling?

Hi Florency, wanted to know... you said 2 cups n 2 tablespoon of all purpose flour n then you mentioned 250 gms. So should it be 500 gms or only 250 gms. Since 1 cup measures 250 gms.

Probably needs some rice flour to get a crispy shell. I'm just making mine and have added 1/4 cup of rice flour

Why to fry the Cross? You need to only bless and make the sign of the Cross b4 starting to prepare any dish.

Hello Marylina :) I may not have a chance to show the Jaggery Neureos, my dear. But the pastry is exactly the same; and the filling ‘choon’ is a simple mixture of jaggery and fresh grated coconut (the same that I have shown in the Alle Belle and Sanna video). Might make a video for this next year, thank you for the suggestion 💫
