Sardines in Tomato are simply wonderful! Although many make a tomato and herb paste, I prefer this method for two reasons. One, it’s simpler in terms of number of utensils used (no mixer jars needed), and two, the blend and individuality of the ingredients. You see, in this, the tomatoes contribute their tang to the sardines and they aren’t overtaken by the strong flavour of the fish. The garlic makes itself known even though it’s in the background since it’s cooked in the oil first. All in all, this recipe is a wow! Try it and let me know!

Ingredients:
10 Sardines
Oil
8 Black Peppercorns
7 to 8 Garlic cloves
4 Green chilies
4 large Tomatoes
Salt to taste
A Tablespoon of Oil
A little less than 1/2 cup Water
Pressure cook with the whistle for 35 to 40 minutes.
