Today's recipe is a Healthy kheer option made with sweet potatoes ,coconut milk/regular milk and jaggery & ghee.it just has to be delicious if you have these ingredients.Have this warm after a meal or chilled as a cold dessert ,anyway you have it ,you will be wanting more.

Ingredients
2-3 medium sized sweet potatoes(enough for 2 persons so you can double or triple the quantity depending on how many people you are making it for.
(soak these in water for 30 mins,scrub all the dirt and grime away using a kitchen clean brush).pressure cook these for 1 whistle on high and then slow cook for 10 mins.once cooled peel and cube.
4 tbsp grated jaggery/gul
1/2 cup of thick coconut milk(see the video below)

1 tsp of cardamom/elaichi powder(3-4 cardamons)
a few fresh turmeric/haldi leaves(optional)but this adds a amazing flavour to this kheer
1 tsp ghee/clarified butter
a few cashewnuts (optional)
